25.01.2022 Up super early and heading north tomorrow. The FRESHEST spices in town are BRAZENLY teaming up with the freshest markets in town. Going to be selling at Chipping Norton. Liverpool growers and foodie markets. They sell straight from the producer to the customer. Super fresh produce and yummy foods. It's a great market and well worth the visit. 24.01.2022 Thai Tom Kha soup. This soup is sublte and not hot. Flavours of galangal, ginger, and lemongrass. Literally a 10 minute easy peasy soup that tastes light, fresh and flavourful. ... Do the prep in the time it takes to bring a can of coconut cream and a half tin of stock to boil. While thats coming to the boil get your ingredients ready. I went with simple fresh herbs, mushrooms and tofu.. but thin slices of chicken or sliced prawns and fish work equally well. Prepare your noodles and place them in your bowl. When the coconut is boiling add in a little over a tablespoon of the tom kha blend.. add the chopped ingredients, bring back to the boil add fish sauce and lime juice, chilli to taste. 22.01.2022 Ever eaten a great Thai curry or soup and thought there is one flavour here I can't quite tie down to its source, it's yummy but what is it? The answer is probably this sexy beast right here.. Galangal. Not many western based shops sell it so unless your an asian store junkie like me you may have never come across this culinary treasure. I love it.... It is the cousin to the better known ginger and turmeric. Same family. And to make it more difficult there is greater galangal and lesser galangal. Most of the galangal sold in Australia is greater galangal. Ever so slightly similar but also totally different flavour to ginger and completely not interchangeable in recipes, in my opinion. Galangal is harder and woodier than ginger. Its a pale cream inside. Has a sharp citrusy almost piney scent. Its zingy, slightly pepper spicy, fragrant and herbal. It's the essential flavour in Thai Tom Kha soup, which is not surprising as the Thai word for greater galangal is kha. :) Tom Kha is a smooth, clean and subtle soup. All thanks to the flavours from this wonderful rhizome. I use it in all of the Thai blends and in the Vietnamese soup blend as well as Ras el Hanout. Have I said its one of my happy spices.. I just love this stuff.. wish you could smell it. Look out for it when your shopping and take home some to experience its wonderful smell when cut, just be super careful cutting it.. can be a bit tricky to slice safely. Anyway that's galangal. I've gotta go chop. :)

17.01.2022 Drying 2kg of onions and garlic.. Can't say it's one of my favourite things to dry.. when i walked in this arvo after they'd been drying all day my eyes watered hehehe the things I endure so what you purchase is the best I can make. Also here's a free pro tip.. don't chop and mince 2kg of garlic cloves before your 9 to 5 day job.. people look at you strange wondering why you are so pungent at 8am.. eeek.. ahh well shoulda chopped the parsley instead. Off to chop the 24 bunches of parsley, 10 bunches of spring onion, 5kg of red capsicum and 12 bunches of garlic chives before RFS training tonight.. hopefully the garlic has receeeded by then. :)

Looks like a bit of weather but that shouldn't deter you.. these are all undercover.. and it is the highlands after all...its meant to be moist up here.. hehehe.. Won't find any fresher spice blends. All the Thai blends are in the dryer right now and as they do their thing I'm making the rest.. 20 to go.. but who's counting Brazen Spices..like having a chef in the kitchen without the stress and mess. :) @bundanoonmakersmarket

11.01.2022 Parsley! So much nicer than garlic. Ahh don't get me wrong I love eating garlic and its wonderful flavour.. Its a green oasis in the dryers tonight. Parsley, like coriander, gets seperated into stems and leaves. Each has a slightly different flavour so each gets used differently. Some blends need the stem, some leaf, some both. ... B.T.W. ...
