15.01.2022 FRESH SNACK ATTACK: Madagascan beans. This is my first proper harvest of Madagascan beans aka Lima or butter beans. You can eat them fresh from the vine after depodding, just like peas. A great crunchy snack, jam packed with protein, slow release carbs and fibre to satisfy your hunger as well as a range of B vitamins including folate.... You can also allow them to dry for storage after which you will need to soak overnight and cook them for your one pot wonder casserole or chill to toss on a salad. 05.01.2022 GLUTEN FREE BREKKY: Quinoa porridge As dietitians we say eat everything in moderation so we have a good balance of foods and nutrients, and that often includes expanding they types of grains we eat. This quinoa porridge made on soy milk has a light and fluffy texture with a slightly nutty flavour. Matched with my native raspberries it was a brekky treat!... Quinoa is a good source of protein, slow release carbohydrates, fibre, magnesium and B vitamins like thiamin and folate.
