The Normande breed originated in Normandy, France from cattle brought to the country by Viking conquerors in the 9th and 10th centuries. For over a thousand years these cattle evolved into a dual purpose breed to meet the milk and meat needs of the residents of northwestern France. While the Normande has always been used for dairy (it is the breed used for making Camembert), it has always presented strong dual-purpose qualities. In France, the Normande has always been known for its unsurpassed marbling quality, flavour and tenderness, and regularly wins blind tests for its taste.

08.01.2022 9 weeks ago we reseeded one of the areas our pigs run on and today the pigs returned to a lush mixed species winter crop. The pigs originally cultivated this area for us, we then planted a mix of forage turnips, tammar grass, clover, chicory and cocks foot. Its been a great success all round ensuring the land was not laid bare over the winter months protecting our top soil from being washed away in the rains. The pigs obviously benefit from the extra greens in their diet t...hat we feed alongside the spent brewers grains from the brewery and whey from the cheesery. It also gives them some rest bite from what would otherwise be a muddy hole. 05.01.2022 It's hop harvest time - which means fresh hop beer! Once a year our brewers get their hands on some juicy, fresh flavour-filled Tasmanian hop cones from Bushy Park. This year they received 75kgs of pungent-smelling green 'Enigma' hop cones. Our fresh hop beer is currently fermenting away, and it will be ready for the Fresh Hop Festival in April. 04.01.2022 This will probably be a really boring photo for most of you. But to me its really cool. Over the past four months my team and I have worked bloody hard to reinvent our business model after the old one fell victim to COVID. Part of that has been finding new homes for our products. This pallet of beer and wine is heading off to Japan today... our first foray into exporting for over 15 years. Thanks to our mates @huonsalmon for the connection and to @buysomethingtasmanian for helping. Its been a tough ride lately but through innovation and collaboration, I have no doubt Tasmanian producers will come out the other side of this with their heads held up high.

03.01.2022 Finally we have had a decent break in the weather from what so far has been a very wet spring. Today our first group of 6 week old calves were turned out onto the pasture after getting off to a great start in our calf shed protected from the tassie elements, so good to see them out on grass with the sun shining.

01.01.2022 A couple of weeks ago we started an exciting new phase on our Glen Huon Dairy farm. From the start we have always wanted our farm to be open for people to come experience the sights, sounds, smells and tastes of our beautiful organic dairy farm located in the picturesque Huon Valley. We have employed the very talented Michael Paul and his team of M Paul Builders (MPB) to carry out this exciting new project. Currently our very old and beautiful, yet very dilapidated, farm ...shed is in the process of being lovingly saved from becoming a heap of old timbers and repurposed into an event space where we will be able to hold functions throughout the year including farm tours, cheese tastings, BBQs and much more (watch this space!) We are also in the process of building a small farm shop where we will finally be able to offer locals and visitors our organic milk, cheeses, beef, pork, wood fired bread and many more tasty treats from the team at BICC and other amazing local Huon Valley producers. We will also be offering some ready prepared produce from the shop ready to enjoy right here on the farm. In addition to these two projects we are planting out a small mixed fruit orchard and kitchen garden situated around the shop and event shed space. The pigs are not missing out on the action. They are having beautifully built bespoke housing and pens also hand crafted by Michael and his team. This will allow us to not only increase the number of pigs we currently keep but also have a more efficient way to rotationally graze and rest the land. Last but not least we are building a new machinery shed as you can never have enough sheds!! We are all very excited and proud by how it is taking shape and cant wait to open the farm gate and share it all with you.
