01.01.2022 Our sausages are filler, colour, artificial additive, preservative and binder free- crap free! Growing up sausages were not a special thing to look forward to and before we started butchering ourselves my impression was that a lot of waste product went into sausages. But our sausages are made from prime shoulder meat (the hock end) and leg trim (from cutting steaks) and 30% backfat mixed well by hand using @olssonssalt as the only binder. How does this work? We hand pound the... meat until the salt and water breaks the protein walls down and the mince becomes sticky and the fresh ground spices we blend in-house become fragrant. This helps hold the sausage together once it’s filled into natural hog casing. Cooking tips: never prick your sausage as they will dry out and the fat is where the flavour is held; grill them in the oven or on the BBQ but always slightly undercook them and rest like a good steak. It’s ok to eat slightly pink sausages. In store and online pork and fennel, pork apples and sage, bratwurst, Toulouse, hot Italian.
