Get creative and diversify...exactly... what Bruce Johnson, who runs the annual Girrakool Blues Festival & BBQ, has done...setting up a cafe on the front lawn of his home in Bay Street Patonga. "It's been hard and challenging but yeah, I kind of never thought I'd be doing this out the front but, you know, here I am..ha ha ha." Bruce says he has Council approval, the correct food licenses and that his neighbours love it. At the moment Cafe Du Blueza is only open on weekends.

19.01.2022 Gumbo is a one-dish meal which sticks to your ribs. A nourishing and filling stew,it’s difficult to describe to the uninitiated.The word Gumbo has two possible derivations from either of it’s alternative principle ingredients: File and Okra. The Natchez and Choctaw Indians of the bayous taught the Cajun settlers many tricks to ensure survival in the swamps.One was the use of sassafras,an aromatic tree of the Laurel family,which they call kombo. They used the bark of the roo...t as a flavouring for root beer- it is horrid ! Thankfully they also used the leaves,pounding them to make File powder,a basic seasoning in some Gumbos.Some folk however,feel the name comes from the word for Okra,ngombo meaning Ladies finger in Bantu,the language of many slaves.I’ll let you choose the derivation. All our Gumbos use both okra and file powder.It adds extra thickness and flavour.
