Lucky for us, West Australian Good Food Guide recently took the ...time to find out how they came to be and boy, it's a good one "When passionate cheesemaker Jane met sheep farmer Bruce, magic unfolded in the form of an exceptional range of award winning cheeses. The former nurse and policeman started the Cambray Cheese journey by importing three East Friesian milking sheep into Western Australia in 1997; they then started the lengthy process of breeding a suitable milking flock. Soon after, Bruce and youngest son Tom began building the dairy and factory themselves. Cambray Cheese carries the official Farmhouse status - every stage of manufacture happens entirely on the farm; only milk from a specially selected flock is used to produce the range of artisan handmade cheeses. The couples dedication to providing a loving environment for their little lambs (and future milkers) is admirable they keep them close to the house to give them as much human interaction as possible. Over the years Cambray has won a swag of awards and supplies to some of WA’s top restaurants. Their range includes soft white-mould cheeses, a traditional Greek style feta and a variety of matured cheese including their famous Farmhouse Gold. Visitors to the south-west can drop in to their farm shop, where you can taste their full range of products, purchase a cheese and pair it with a bottle of wine from a local winery."" 05.01.2022 Thank you for the kind words! #Repost @johnlethlean with @get_repost So much Australian cheese is disappointing. @cambraycheese just keeps getting better every year. The Farmhouse Gold is a hard, mature sheep milk cheese with a quite distinctive sweet/savoury nose and a fine grain texture. The Blackwood is it’s own thing too. A dry-ish, mild blue, judicious salt, with firm texture and real aged character. It’s so wonderful that people are making cheeses they believe in, not just cheese they think will have commercial appeal (I.e. bland nonsense). Onwards and upwards for the WA cheese industry @hallsfamilydairy
