Dont rush it, perhaps enjoy a sneaky Christmas cream liqueur with some Camperdown Dairy Milk while you cook! Chocolate Hazelnut Fudge 3 cups white sugar... 2/3 cup cocoa 1/4 tsp salt 1 1/2 cups Camperdown Dairy Whole Milk 120g Camperdown Dairy Unsalted Butter 1/4 cup chopped hazelnuts 1 tsp vanilla extract Line an 20cm square slice pan with baking paper. In a heavy saucepan stir together sugar, cocoa and salt, then add the milk. Stir continuously with a wooden spoon over medium heat until the mixture starts to boil. Reduce heat to low and continue to cook without stirring until temperature reaches 110C. Remove from heat, add butter and vanilla. Do not stir. Allow to cool to 42C, then beat with a wooden spoon until mixture begins to lose some of its gloss. Add hazelnuts, stir through and spread quickly in prepared pan. Allow to cool completely at room temperature. Cut into squares. Store in an airtight container at room temperature. Hint: Dried figs can also be added to the fudge for a delicious fruity twist.

These Christmas cookies are perfect with Camperdown Dairy Salted butter, adding just the right amount of balance to the sweetness. 250g Camperdown Dairy Salted Butter, softened... 1 cup castor sugar 2 eggs, lightly beaten 2 tsp vanilla essence 2 cups SR flour 2 cups plain flour 100g dark chocolate melts hundreds and thousands, to decorate Cream butter and castor sugar together until light and creamy. Gradually beat in eggs and vanilla essence. Sift both flours into the butter mixture and fold in to make a stiff dough. Knead lightly and roll out to 5mm thickness, cut into stars and place on lined baking trays. Bake at 180C for 10-12 minutes or until golden. Allow to cool. Melt chocolate over a double boiler and dip biscuits. Sprinkle with hundreds and thousands and allow to set.
