20.01.2022 ** A FESTIVE EASTER MUST HAVE! Cape to Cairo’s Pickled Fish, Available in 400g Portions ** Many countries around the world celebrate Easter (Sunday April 4, 2021) with delicious food but in South Africa Easter just would not be complete without one of the country’s favourite staples: Cape Malay-styled pickled fish. While closely associated with Cape Town, pickled fish is today a much-loved national dish, enjoyed by both Muslims and Christians alike not only during the Easter ...festivities, but year-round too. Although pickled fish is enjoyed in many countries, the South African method of preparation is quite unique. It involves frying portions of line-fish seasoned with salt and pepper (local varieties such as snoek, yellowtail, kingklip and kabeljou (cob) are favoured) and cooking a mixture of onions, ginger, garlic, cardamom, curry powder, thyme and other spices before adding vinegar and sugar. The turmeric-hued mixture is then poured over the cooked fish in a casserole dish, allowed to cool and refrigerated for at least 24 hours to give the fish a powerful flavour. The result is a deliciously sweet and tangy, lightly curried dish that is traditionally served cold with hot-cross buns (how’s that for a combination) or buttered brown bread. It can be kept for up to six weeks, but it is usually such a hit, it never lasts that long! For all your Easter snacking needs or for those times when you need a quick, light meal to be enjoyed around the dinner table (or campsite) with friends and family you won’t go wrong with our new, ready-to-eat pickled fish offering. With origins in South Africa, biltong is a cured meat (often beef) thats been aged for a few days. One of the major differences between biltong and traditional beef jerky is that biltong is both cured and dried while jerky is just dried, resulting in markedly different texture and taste. 14.01.2022 *** Foodie Feature: Oven-baked sweet potatoes *** Peel the sweet potatoes (if theyre large, cut them into large chunks). Melt the butter in a large pot. Add the sugar and keep stirring until the sugar is melted. Simmer the butter and sugar mixture until its a light-caramel colour. Add the sweet potatoes and stir them through the caramel. (The caramel will harden as you add the potatoes, but the moisture in the sweet potatoes will make it runny again.) Add cinnamon stick and... season with a little salt. Turn the heat down low and cover. Dont stir, as the sweet potatoes might break up and you want to keep them whole. Just shake the pot every now and then so theyre completely covered in caramel. Cook until the sweet potatoes are tender. Dont overcook or they will become mushy.
