18.01.2022 Over the last week we have had the wonderful opportunity to stop and slow down. I love checking out small towns cooking shops as I always find some wonderful little gems that we dont seem to get in the city. I have been wanting to create small bite sized rectangular Raw desserts and while away I found exactly what I have been searching for. I was so excited to get them and am even more excited to get experimenting with them. ... These silicone moulds have a very firm rim around them which is even better so I dont need to put them on cutting boards in the freezer when I am setting them. I know, getting excited about moulds, but you know what it is actually the lovely new shapes that I will be creating and as I always day... We eat with our eyes first and presentation is 3/4 of getting someone to take notice. Really looking forward to see how cute these look when all completed and decorated up. 17.01.2022 Being able to find amazing plant based food is a wonderful gift. Years ago it was so hard to find plant based food in cafes or restaurants. I love it when we travel and explore this beautiful planet that we get to sample some of the best places that create amazing food for others to enjoy because it is their passion and it is in their very DNA that they just have to share it with the world. ... On our trip last August we had some amazing food in some gorgeous locations and tasting food like this inspires me to share what I love with the world even more. I also love that now I get to chose not only yummy food but healthy food all at the same time. I remember coming away after trying this amazing tofu dish that I needed to learn how to make it and I am happy to say that we have had a version of it on more than one occasion. 12.01.2022 I am so blessed that I get to follow my passions & dreams & love what I do everyday. When you realise that life is more than the 9-5 grind doing something to pay the bills then you really begin to live life on your own terms. Dont get me wrong, running 2 business can be stressful at times and frustrating but I love every bit about it.... 11.01.2022 RAW RASPBERRY CHEESE CAKE INGREDIENTS 1 cup Pitted Dates, soaked for at least 5 hours 1 cup Almond Meal... 1/2 cup Shredded Coconut 11/2 tbsp Coconut Oil 1/3 cup Water from soaked dates 2 cups Raw Cashews, soaked for at least 5 hours 1/4 cup Coconut Oil 2 tbsp Maple 2 tbsp Lemon Juice 1 cup Coconut Milk 1 1/2 cup Frozen Raspberries 1/2 cup Frozen Raspberries for garnish PROCEDURE Soak the Pitted Dates for at least 5 hours, preferably overnight. Drain well when ready but make sure to keep some of the soaking water. Place all the ingredients in a powerful Blender and blend until a sticky dough forms. Put some of the base mixture into the mini cheese cake moulds. Press the dough firmly into the base so it is well packed and tight. Place the tray in the freezer to set for at least 30-45 minutes. RASPBERRY CREAM Soak the Raw Cashews for at least 5 hours, preferably overnight. Drain well when ready to use. Place all the ingredients in a powerful Blender and blend for a few minutes until creamy and smooth. Taste and adjust with more Raspberries, Syrup or Coconut Milk if needed. Pour some batter in every cheese cake mould. You can almost fill them completely. Place a few Frozen Raspberries on top of each cheese cake as a Garnish, then place back in the freezer to set for at least 2 hours. Top with raw chocolate if you love your chocolate. 06.01.2022 Raw Lime Cheesecake The Base . 240g pistachios . 1/2-1 cup desiccated coconut... . 320g macadamias . 160ml maple syrup Filling . 2 cups of cashews - soaked and rinsed . 1/2 cup coconut oil . 1/2 cup maple syrup . 1/2 cup of lime juice & add some lime zest into the mix . 1tsp vanilla extract . 1/4 cup coconut milk . 6-8 drops of lime essential oil or to youre liking, Food Grade only. Method . Process pistachios in the blender & place in a large bowl. . Process macadamias in the blender and mix in with pistachios. . Add coconut to nut base and mix through. . Pour maple syrup in with mixture and mix through till crumbly . Spoon into lined cheesecake tin and press evenly over the base. . Pop into freezer to set while you make filling. . Add all the filling ingredients into a blender and process until smooth and creamy. You might need to add more coconut milk, or lime zest or lime essential oil depending on the consistency and flavour. . Pull the base out of the freezer and add the filling mixture on top. . Pop back into the freezer to completely set, or add some extra topping such as shredded coconut, lime zest, crushed nuts. . Bring out of freezer about 10 minutes before serving and further garnish. 04.01.2022 We have an amazing body and from time to time it sends us little messages that it isnt happy. Part of the problem is that as humans we quite often keep ignoring those little messages until our body gets to the point to where it starts screaming at us to stop what we are doing and take better care of our amazing temple. Many years ago I learned to listen to my body and it has been something that I really pay attention to now, you see I ignored those little messages an...d promptings until my body began to shout at me and even then I kept pushing through. Now after having been bed ridden and really sick, I listen to my body and make sure I take better care of my beautiful temple. Our health is a precious gift and until one loses that, I think we take it for granted. We think we are invincible until we are not and then we have to take notice because we have no other option. 03.01.2022 When I saw this quote I thought WOW! This is so true, when we eat mindfully... So often in all areas of our life we just fall into the automatic, the I dont want to think about this right now. ... We comfort eat, we dont exercise because we dont feel like it. We want to be healthier, skinner, feel better and so much more but we continue to sit on the couch, keep doing the same thing over and over again and nothing changes. I hear people everyday who are teaching others about health and I cringe as I hear them speak about government guide lines, how we need to eat 3 times a day and the list goes on, these things they are advising others to do are how we got into this mess already and it hasnt worked and our country and world is getting sicker, fatter and more unhealthy every day. It seems simple to me, if something isnt working then we need to try a totally different approach, may be something even really out of the box, a bit radical, lol. And then people criticise, that would be the ones who dont want to change, or try something that may even work. And besides if people are well and healthy then their is no sickness industry and they wouldnt like that. Treat your body with love and respect, I guess we need to ask the question to ourselves... What do I want more? To keep saying how I want to feel better, be healthier, lose those 10 pounds and be able to hike up that mountain, wishing away my life while at the same time putting things in my body that make me feel terrible. 01.01.2022 "From the bitterness of disease man learns the sweetness of health." ~Catalan Proverb Why is it that so often it takes a terrible illness to shake us out of our apathy about health & then sometimes it still doesnt do that? Why are some of us motivated by illness and trying to find a way back to abundant health and others just keep on the same path of destruction?... If given the right environment our bodies can heal themselves and that process of moving back to true health can take a while. We spend years abusing and neglecting our health and then when we finally wake up we want those instant results, we want it to happen now! We live in a fast paced world of fast food, not enough time and when we finally get home from a long days work all we want to do is sit in front of the TV or computer and vedge out on what ever fast food that we can lay our hands on. Everything we pretty much buy that comes in a packet is laden with sugar, artificial sweeteners, colours and gluten & quite often doesnt even resemble the food that was picked off the tree or grown in a garden. Most of these foods even have loads of numbers that mean something & it is up to us to google what those numbers are! With all these tempting foods that are sweetened with so much sugar so we become addicted and feel good after we eat them, once we have realised that we have gained 20kg and are feeling no so good, we just cant be bothered to get off the couch to do any form of exercise because we are bloated and tired. I dont know about you, but it is time our world took a second look at all the illness and disease around us and take charge of our own health. What truly amazes me is that...
