16.01.2022 Enjoying the rain today by taking some soil samples in various paddocks around the farm. Soil sampling allows us to tailor the most suited crop or pasture variety to the soil type in that paddock, and also informs us of what the soil may be lacking in nutrients and minerals. We can then add these to the soil to increase grass growth, productivity and to ensure our cows are eating the very best pasture. 07.01.2022 As promised! Delicious Carrington Beef and Veggie Pie Ingredients ... PIE: 1 x Beef roast diced into bite sized pieces. 6 x Medium sized potatoes 150g seeded mustard 400g of diced pumpkin or sweet potato 4 x brown onions 6 x cloves garlic 3 sprigs of thyme 3 sprigs of rosemary 1 stock cube OR (1 litre of beef stock) vinegar of choice best is white wine vinegar or apple cider vinegar on hand for finishing. Salt and Pepper to taste 1 x chilli (deseeded- unless you like the heat) 2 x lemons 1x bunch of parsley. PASTRY: 250g plain flour 125g chilled butter diced 50ml warm water pinch of salt Method PASTRY- 1. Add the flour and butter together and crumb the butter like you would bread crumbs into the flour. 2. Once all incorporated, add the water and salt to bind the mixture together and make smooth. Don’t worry about working the mix too much. If the butter isn’t completely incorporated that’s okay! Flatten out to make a round plate size parcel, cover and place in the fridge to chill. FILLING- 1. Dice the roast up into bite sized pieces and brown in a hot pot. Set aside in a bowl. 2. Slice or dice your onion, garlic, pumpkin and potatoes. 3. Gently fry the onions in the same pan, add a pinch of salt on a medium heat. Once the onion is soft and translucent; add garlic, thyme and rosemary, another pinch of salt and plenty of pepper. 4. Once the veggies are cooked, add the stock allowing the pot to bubble and take on all the flavours. You can also add a nob of butter if you wish. Once stock is boiling, add potatoes, pumpkin and meat back to the pot. NOTE: Make sure the stock covers your ingredients. 5. Place a lid over the pot and simmer for 30-45 minutes. 6. In the meantime, get your pastry back out of the fridge and roll to your desired thickness. NOTE: This is a short crust pastry so it won’t puff like puff pastry). If you don’t wish to make the pastry, you can use store brought filo pastry, or puff pastry as well). 7. Gremolata- In a separate bowl, chop parsley and chilli, add the mince of one garlic clove, zest of lemons and the juice, finish with dash of olive oil. (This is a great finishing marinade for all proteins and pastas. Use this to finish the pie and give it the lift it needs to lighten and freshen it up). 8. Once the filling has cooked and thickened naturally, season accordingly to taste. 9. Stir in 4-5 tablespoons of gremolata (the rest will keep refrigerated for a week). 10. Place in mixture into a pie dish, and roll the pastry over the top. 11. Paint the top of the pie with egg yolk or melted butter for an even golden coating. 12. Bake at 175 degrees C for 25-35 minutes or until golden brown. 13. Serve with a fresh garden salad, or steamed vegetables and a spoonful of sour cream.

06.01.2022 Meet Jess Bell, the face behind the day to day running of Carrington Meats. As well as managing the bookwork, orders and social media, I also oversee a lot of the animal management on farm. I completed a Bachelor of Agriculture Science in 2013 and have worked in the Agriculture industry in both the public and private sector for over 10 years. My passion for animal welfare is second to none and I hold myself responsible for much of the husbandry practices on the farm. The ethos for our business, and my favourite quote was said by the famous Temple Grandin; I think using animals for food is an ethical thing to do, but we've got to do it right.
