10.01.2022 With the cold & wet weather upon us, we thought we'd share one of our favourite soup recipes. Like & share so your friends can enjoy Potato, leek & bacon soup with crunchy Turkish bread fingers.... Ingredients- 2 tbsp butter 2 garlic cloves, chopped 2 large leeks 450 g potatoes 2 tbsp chopped fresh parsley 1 tbsp chopped fresh oregano 1 bay leaf 850 ml vegetable stock 200 ml cream 100 g bacon 100 g smoked firm cheese, grated Salt & pepper Chopped chives for garnish Turkish bread loaf Method- Melt the butter in a large saucepan, add the garlic & cook for about a minute. Trim & slice the leeks, using the white part only. Peel the potatoes & cut into bite sized chunks. Add the leeks and cook, stirring for 2 minutes. Add the potatoes, half the parsley, all the oregano and bay leaf & stock, salt & pepper. Bring to boil, reduce heat, cover saucepan and simmer for 25 mins. Whilst its simmering, cut bacon into small cubes, grab another pan and cook until nice & crispy and place on paper towel to remove excess fat. Remove soup from heat and leave to cool for about 10 minutes, take out bay leaf. Transfer half the soup to a food processor or use stick blender and process until smooth then return to the saucepan with the other half, stir in cream & bacon on a low heat. Grab Turkish bread cut into 10 cm wide fingers, drizzle olive oil, sprinkle a little salt, place under grill until nice & crunchy. Remove soup from heat and stir in cheese, ladle into warm bowls, garnish with chives and parsley, Turkish fingers on the side & enjoy The crunchy Turkish bread fingers dipped into the soup is a taste sensation Carve It Up Catering, the perfect option for your upcoming wedding, party, corporate event, any special occasion.
