17.01.2022 NO BAKE MANGO CHEESECAKE BARS ~ This one has Summer written all over it thanks to our kitchen whiz @betterbeingsteph INGREDIENTS: For the base:... 50g oats, ground into a flour 40g PROTEIN Switch Vanilla Bean 40g honey, maple or sticky sweetener of choice40g peanut butter or nut butter of choice 40-60ml almond milk or milk of choice, as required. 1 scoop ADRENAL Switch Mango Nectar - For the filling: 250g vanilla Greek yoghurt or coconut yoghurt. 200g cream cheese 100g frozen mango 2 scoops ADRENAL Switch Mango Nectar Optional: passionfruit pulp, to top - METHOD: 1. For the cheesecake base: Mix all ingredients together in a large mixing bowl until combined into a dough consistency.2. With your hands, mould the mixture and press it down firmly into a lined loaf/brownie tin. 3. For the filling: Mix all ingredients together in a blender until combined. The texture should be creamy and thick. Pour this mixture on top of your base and place in the freezer to set for at least 4 hours. 4. Once completely set top with passion fruit pulp, allow to set for another hour, before slicing into 8 cheesecake bars.
