18.01.2022 Well today, 5 years ago, I did my first dinner service at Catinalla’s. And what a night it was! One I will never forget. The hype, the buzz and pure excitement of putting a dream into reality. It was the beginning of a five year experience that I will never forget. There were highs, there were lows and everything in between. The people and friends that I have met, the customers that have become friends and the customers that have come from Melbourne and beyond to visit us. I... thank you all. Your appreciation of my food, my story and my passion for my family has made the hard five year slog worth every second. In these uncertain times, I feel so privileged for having the guts to give Small business a go for the third time, for coming out a different person and for realising life is to be lived. And making mistakes, making decisions and staying true to your self and your beliefs, is worth every second. Today I handed in the keys to Catinalla’s. It is over. 17.01.2022 And that is a wrap......2019. Five years in the making. And what a journey. Id like to thank firstly my staff from Day 1, through to our staff for the past 2&1/2 years. Your dedication to telling our story has been unwavering. It all began because I wanted to share my mother in laws cooking with as many people as I could. It was easy to me..... Id open a cool little place and cook her recipes. I have met so many amazing people within this time and so many who followed m...e from the Star and The 3844. I thank you all for sharing your lives with me. The journey became hard as I wanted to cook but had to be front and back of house. This is where Shaun & Kade came in. They became my partners. They would run FOH and Id run BOH. I thank them for taking on my story and telling it with such passion, that youd swear Kade was Italian! It is a journey that I have learnt from, one that I dont want to repeat, (as that would be boring!) and one that will remain with me forever. But I need to say to Lachlan, you are such a champion mate. You are the one that has influenced me to close and move on into a teaching role. I have learnt so much from you. We have been through so much together and you are one fine young man. You have given me purpose and fight and with the confidence that you have now found, you have given me strength to stand up. You have given me many laughs, a few tears but so much enjoyment. If I could have 10 Lachies, Id be so happy! And to our staff, I totally love you guys. You light up my life. 15.01.2022 Today I was lucky enough to team up with Noelene Marchwicki and cook a Community Long Lunch for World Food Day, Gippsland on a plate. We used local produce from a variety of local producers throughout the Greater Gippsland. So much divine produce from breads, olives, cheese, chutneys, fruit, vegetables, herbs, spices, lamb,beef, hot sauce and eggs. What a fabulous day.

11.01.2022 Happy New Year to you all!! Well it took a week to unwind and for my body to stop hurting after we closed on Dec 22nd. I hope you all have had a wonderful Christmas and a great start to 2020. I just want to let you all know that on Monday I begin teaching hospitality to people that are currently unemployed who are wanting to gain experience in hospitality. Im so excited to have the skills with my qualifications to teach Front of House and Back of house. Ill be teaching thi...s at the VRI Hall in Queens Parade, Traralgon. We will be having a weekly Community Lunch so jump on over and have a look at our website for more details. We would love to serve you. And YOU will make a difference to our team. But tomorrow I begin my other new job as Restaurant Manager & Function Coordinator at By Jorg Restaurant at Narkoojee Winery. I am so excited to be joining the Narkoojee team and so look forward to hosting any function that you may require. May it be a P.D. day, a wedding, a birthday, a Girls gathering, a bucks do to a wake. We have a beautiful venue that we can customise food and wine packages for. 05.01.2022 Today was our first Community Lunch. What a fabulous group of individuals that I had the honour to work with. We ventured to the kitchen garden and picked our ...produce, washed it and prepared it, then cooked it. The students had taken the guests order and then served it. Our menu today was : Zucchini flower pancakes(gf) or Stewed silverbeet tart. Both served with salad made up of fresh herbs, lettuce, cucumbers & tomatoes. Dessert was Apple crumble with cream. My students did an incredible job. #teamwork See more

04.01.2022 This is why we use Gippsland Jersey Milk at Catinallas. Yes it is more expensive and we dont make as much profit on our coffee sales but I know we are doing the right thing. Can we put a price on our farmers livelihoods? I dont think so. Support our farmers. Buy coffee from local businesses that support their local farmers.
