15.01.2022 Foodie Friday: Tuscan Garlic Chicken. What an impressive table piece this is. Serve this with a crisp glass of Stoneleigh Marlborough Sauvignon Blanc. On sale $15ea until 28/2. Here’s how you can make it: 3 small chicken fillets 1 cups spinach leaves 1/3 cup sun dried tomatoes 2/3 cups shredded mozzarella... 1/3 cup pesto cup white wine 1 cup thickened cream 3-4 cloves garlic, grated 1/3 cup chopped parsley Pre-heat oven to 180 degs. Slice chicken fillets in half, without cutting through completely. On the inside of the chicken fillet spread some pesto on both side, then place some sundried tomatoes, then spinach leaves and top with the shredded mozzarella cheese. Heat up a frying pan with a good glug of olive oil. Place the chicken fillets in and give them a good searing. About 5-6 minutes. Once done, place on a baking tray and cook in oven for a further 20 minutes ensuring they are cooked all the way through. While the chicken is in the oven, heat up the same frying pan from the chicken and gently fry off the garlic. After 3-4 minutes, add the white wine. Cook off for a further 2-3 minutes then add the cream and parsley. Cook down on low-medium heat for 10 minutes then turn off and set aside. Once chicken is out of the oven, place the chicken in the cream sauce and then serve.
