Bouquet: Spicy bramble and black cherry nose with fresh raspberry top notes. Palate: Soft damson plum palate with red berry fruit flavours, bright and juicy on a medium bodied elegant palate. Fine tannins and refreshing balancing acidity finish off this easy drinking wine. Fox Whistle 2020 Pinot Gris: Colour: Pale straw with just a hint of varietal blush. Bouquet: Poached pears and frangipane tart with accents of citrus zest. Pure, smooth Australian sugarcane spirit is distilled with traditional juniper and Australian native botanicals lemon myrtle, cinnamon myrtle, pepper berry, finger lime and wattle seed. Butterfly pea are steeped in the liquid for 18 hours to bestow their natural blue tint. 14.01.2022 Toms pick(s) of the week: MAIN & CHERRY McLaren Vale 2016 Shiraz: ... Sourced from the iconic Breakneck Creek vineyard in the cooler eastern foothills of McLaren Vale. Gently fermented in small open fermenters for 12 days, before basket pressing and maturing in French and American oak for 18 months. It then rested in bottle for another 2 years before releasing. The resulting wine is rich, dark and decadent. It is drinking superbly right now, or will reward those with even more patience. 2019 Sangiovese: Sangiovese from two selected sites in McLaren Vale. Fermented using wild yeast, before basket pressing into older French oak for 6 months. A fresh, savoury style with early tannins. 12.01.2022 Toms pick of the week: Pirate Life Hazy Pale 5.4 ABV This unfiltered ale pays homage to a PL classic, albeit through a slightly ‘hazy’ lens.... It’s brewed with a selection of premium malts. Wheat and Pale lend a sturdy base, while Munich, Carapils and Caraaroma add body and light toffee hue. It pours with an attractive opacity, thanks to polyphenols accrued during dry hopping. International varieties Kohatu, Wai-iti, Strata and Mosaic supply intense aromas of tropical fruit, with lifted notes of citrus and pine. It’s moreish and malty, with a well-rounded mouthfeel and fine mid-palate bitterness.
