25.01.2022 Cupcake Baking Tip Have you ever had your cupcakes dome up really high or overflow your patty cases? Then it's so hard to pipe onto the cupcake and make a pretty design! It's actually very easy to achieve a nice flat top on your cupcakes, gluten free or not! Simply reduce your baking temperature from 180 degrees to 160 degrees and cook for longer. And don't forget to only fill you patty cases 1/2 up!... Easy - perfect cupcakes every single time. #learntobake #coeliacaustralia

19.01.2022 Another pretty in pink gluten free cake from the other weekend. This one hid a glorious inside of GF Chocolate cake with Nutella buttercream filling. Now you'll never guess it, but these pretty blooms were faux! Silk flowers are such a great alternative for a cake. For one you don't have to worry about wiring and taping and you know, poisoning your guests if you pick the wrong type. But it's also a great way when you want to achieve a very specific look that you might not b...e able to guarantee with fresh blooms. We finished this one off with some partial drips hand painted gold, a slight raw edge tipped in gold and some extra piped swirls. Gorgeous! #glutenfreebirthdaycakes #glutenfreeperth

17.01.2022 ~ FAQ ~ "Can you help me with baking gluten free bread?" - I hear this question around 5 times a week, honest! and sadly I can't. It's just not my area of expertise and it's a common presumption that being a gluten free baker means bread too! When in actual fact they are two completely different skill sets. ... 16.01.2022 ~ Gluten Free Baking Tip ~ Did you know gluten free flours weigh more than standard wheat flour? Did you also know that most recipes are actually developed and written in weight and not cups?... This means when you convert a recipe to gluten free you're probably using too much flour in it, which means your baked goods can end up crumbly and dry! The good news is there's a couple of really easy ways to avoid this. 1. Learn to scoop flour correctly. If you do like using a cup (which I'll admit, I do!) be sure to fluff up your flour nicely before hand and either scoop it into your cup gently and lightly or spoon it in, then level off with a knife. 2. Go by weight This isn't a be all answer either, BUT it is a great place to start. On average gluten free flour is approx 140g per cup. This isn't always the case, especially if your recipe was written by someone like me who works with a bit more flour than that. But it is a great place to start. Since this is such a huge topic I’ll be sharing a FREE webinar class all about gluten free flours, how to work with them and just how you can nail your gluten free baking so stay tuned for more info. 07.01.2022 I've had so many gorgeous gluten free wedding cakes over the last few weeks and I just don't have enough space to show case them all! This sweet little cutting cake was from October and was accompanied by a glorious selection of cupcakes for the guests to enjoy. Cutting cakes certainly don't have to be boring either. Give them a little rustic buttercream finish as seen here, top with stunning flowers that tie into your bouquets and make a show stopping display out of wooden... stands and crates. 04.01.2022 Who ever said a gluten free wedding cake had to be boring? This has to be one of the funnest cakes I've made in a while! I know I'm normally rather well known for my pretty pink and floral cakes, so this is a step outside my usual. But damn I loved making it!! With a top of GF Chocolate cake and salted caramel filling and a bottom tier of GF Vanilla cake, lemon butter and vanilla bean frosting we were able to cater to the Bride and Grooms tastes! ... Tie in one fabulously spooky themed wedding which of course was on not only All Hallows Eve but a Blue Taurus Moon as well, and you've got one cool wedding. IRL the soft dove greys, blended with the dusty pinks and hints of violet and deep teal in a stunning marble mix. With veins of gold leaf popping brightly against it all. 01.01.2022 ~ Christmas Gluten Free Baking Tip ~ Want to make a stellar pie but don't want to be slaving away? Simply make my GF Shortcrust pastry up, blind bake in your pie tin as usual, but instead of finishing it off wrap it heavily (including the pie tin) in glad wrap and a layer of al foil! ... Freeze until you need it! Not only does it come back to room temperature quickly and easily but it stays in perfect condition. Simply fill with your choice of filling come Christmas day and finish! Will save you so much time, you’ve got to give it a go. #glutenfreebakingtip #learntobakeonline
