22.01.2022 Wine and cheese make a great pairing but what about cheese aged in wine? We’re so excited that we have got a beautiful Italian cheese dressed in purple delivered to us this week. Italian call it l’ubriaco or ubriaco, meaning ‘the drunk’ or ‘drunk’, to describe their cheese which is ‘cured’ in wine. How does the drunken cheese came about? The legend goes that the practice originated in World War I when an Italian villager hid his cheese, from the looting soldiers, ...inside barrels filled with wine marc. Who knows if the story is true, but its our favourite interpretation! The one we have here is called Di.Vino, it is made from pasteurized cow's milk, made by Moro Sergio family in Veneto, Italy. The cheese is immersed in tuns full of red wine and then matured for three months. There is also a slippage of wine in the cheese that makes it denser and compact. Its smooth and savory flavour combined with rich fruity aroma makes Di.Vino stand out on its own. We will include the Di.Vino in our Dinner for Two cheese box from this week. 16.01.2022 Hey Hey Hey...Today I want to tell you a story about this amazing human creation called UBRIACO RISERVA Cheese, that belongs to the category of the drunken cheeses. It’s a show stopper and it has been an absolute revelation for me! The "drunken" cheese is typical of the province of Treviso, widespread in the rural world and has become an essential product for some gourmets. Drunkenness is a special treatment that seems to have been discovered by chance during the Grea...t War, when the farmers in the areas of Conegliano and Oderzo, in order to hide the cheeses from the raids of the Austrian soldiers, put them under marc to camouflage them. It is produced every year around the middle of September when the grape musts are noisily fermenting in the cellars. After a careful cleaning, the cheeses are immersed in the fresh must for several days. In this way the cheese takes on the typical colour of the type of wine used, which not only protects it but also gives it a certain characteristic aroma. Ubriaco Riserva is made from pasteurized cow's milk, made by @moro.formaggi in Veneto, Italy. This cow’s milk cheese has been soaked in red wine must and cellared for 14-15 months. They use milk from cows grazing in the mountains, and as a results the cheese has a straw-colored paste, which contrasts beautifully with the vibrant purple rind from Clinton and Raboso wine must. 09.01.2022 Is it a modern classic?! The very first time I held a wheel of Cornish Kern in my hands, I was immediately stroked by its distinctive and visually stunning dark rind. Little did I knew at the time, this fairly little-known British cow’s milk cheese had just won the top honor at the annual world cheese awards (2017) by beating 3,000 other cheeses from 34 other countries. Despite only being in the market for two years. No small feat! ... Cornish Kern is made by @cornish.yarg near West Cornwall in Southwest England. Aged at least for 16 months, it has a smooth, bright, nutty and savoury flavour with a hint of caramel sweetness. Originally inspired by Gouda, but thanks to the Alpine style cultures used in its making, it’s also reminiscent of another classic comté. We love to use Cornish Kern for our cheese celebration cakes as the bottom or middle layers. Not only the stunning and mysterious dark texture gives a rustic and rural feeling, Its complex flavour is also undeniably delicious and appeals to lots of people .
