14.01.2022 More lamb leg, this one is butterflied and basted I the inside with Yuzu jam, Ras el Hanout and fresh thyme, then salt and pepper on skin. Went into the smoker over Ironbark and charcoal for 6 hours. Didn't get a finished picture, it was eaten up pretty quick. Guess that meant they liked it.

07.01.2022 Another lesson on pastrami. Client requested this as they had tried one I had previously done. Came up a treat.
06.01.2022 Well it was a busy few days at Chefboy Cooking Solutions HQ. We had a lesson on how to shop at Costco, don't go when you are hungry. Then how to cook the purchased items. Made a Hoi sin sauce, then a Cha Sui marinade to do Cha Sui pork, also made taco spiced wings, Chinese style BBQ wings, a crazy hot chilli and passionfruit sauce, jalapeno Poppers and few more items I didn't get the chance to photograph.
