24.01.2022 What's for dinner?: "LEMON PASTA with PICKLED BROAD BEANS and SEASONED CHICKEN DRUMSTICKS" KID FRIENDLY!! (how to get kids to eat vegies) 1 cup snow peas cut into 2cm pieces... 1 cup mushrooms sliced 2 spring onions sliced 4 asparagus spears cut into 2cm lengths 1 tomato diced 1 bacon rasher sliced 4 sausages cut into 1cm pieces 1/2 jar pickled broad beans 8 chicken drumsticks seasoned 1/2 pkt Penne Pasta 1/2 cup lemon juice (1 cup reserved pasta water) Season chicken and oven bake for 1 hour. Cook pasta, drain and reserve 1 cup liquid. Fry sausages and bacon, add broad beans to soften. Add all other vegies, lemon juice and pasta water, stir to combine and cook for 10 mins. Add pasta and mix through. Serve with a sprinkle of black pepper and cheese if desired. SUPER SIMPLE, YUM! SALMON PATTIES 3 large potatoes mashed 3 spring onions chopped 1 can Salmon (we used Mendolia Seafoods, yum!)... 1 egg 1/4 cup lime juice Salt/pepper Mix all ingredients together. Scoop a large spoonful, shape into a ball, roll in flour, eggwash (1 egg 3tbls milk) and then roll into bread crumb and Lemon Pepper dukkah mix (approx 1 cup crumbs and 50g dukkah). Place in baking dish drizzled with Lemon Myrtle Olive oil and bake until golden & crispy. (or shallow fry in pan on stovetop) Serve with simple salad and olives. Yum! Super simple, super delicious!
