24.01.2022 Kushiyaki [Grilled Skewers] by Minamishima x Yu-u A fun summer collaboration with Chef Yoshiki of Minamishima, who used to run Yu-u. One of Yoshiki san’s signature dishes was kushiyaki, and he’s put together 16 skewers with condiments to have shio [salt] or tare [sauce] style - the way you’d have it at a kushiyaki-ya. There’s chicken, Australian and Japanese wagyu, gyutan and also hatsu [chicken hearts]. You can purchase the bamboo grill too!... 20.01.2022 For me, what makes Japanese cuisine so pleasurable is the subtle touches - never contrived, but rather, about the connection to the seasons and nature. This dish is called sugiitaiyaki - black cod marinated then grilled on paper-thin sugi [Japanese cedar] sheets which impart a lovely woody, fragrant aroma. 13.01.2022 Hopefully this won’t be the closest thing we’ll get to hanami - that time in Japan when the cherry blossoms flourish and picnic mats are spread out beneath the cloud of pink petals. Nevertheless, spring is here, the air is warm, the gardens lush, and the flowers in full bloom. We’ve created this Irodori Chirashi [many colours chirashi] for this reason - to enjoy hanami style with your friends, with miso soup, sakura purin, and perhaps some sake too! 03.01.2022 All good things must come to an end, and with Minamishima opening in a week and a bit, the time has come for us to bid farewell to our collaboration. We’d like to thank Koichi san, Yoshiki san and the Minamishima team for a fun few months, where we were given free rein to bring back a few of chotto’s dishes and create some new ones for the ‘minamishima x chotto at home’ menus. The collaboration will end in a week, and with it, this gallery of chotto creations. Minamishima wi...ll continue to have a small, sushi-focused at home menu, but really, make a reservation for the sushi bar! Chef has been at Minamishima since chotto closed, so he’ll still be there to say hello. To all our chotto customers, thank you so so much. We’ve had the pleasure of seeing some of you again, and it has been so, so wonderful. We hope you stay well and look forward to our next encounter. 02.01.2022 Hiyashichuuka Replacing the kinoko no dobinmushi on our spring menu is this hiyashichuuka or chilled ramen. The noodles are handmade and come with a tomato dashi with shio oil, to have as a tsukemen [dipping ramen]. ... Topped with kinshitamago, pickled daikon and celtuce, soy braised mushrooms and bamboo shoot, okra, cucumber, carrot, popcorn shoots and tomato.
