The sausage news is were no longer making Chrissys Cuts, the retail product consisting of a handful varieties you find in supermarkets. From now well be making smaller batches, predominantly only for our snaggery/brewery The Sausage Factory. Back to first principles in some ways, which (ahem) also means all sausages will be made with these two hands. Fear not though, fearless friends and sausage lovers. Youll s...till be able to buy the sausages directly from The Sausage Factory to cook at home, so if you have a household member addicted to them, stay calm. Ill get more into the blah blah of why in a minute. The good news is our beer Sausage Queen Brewing is going to be stocked in 13 Inner West BWSs in about a month AND as of today we are in the running for even more widespread stocking in BWSs through their Local Luvva competition. It has had a huge response since we canned for the first time in April, and not exclusively from me although goodness knows Ive done my bit. A lot of you extremely gorgeous people have asked me how were holding up with covid, and if The Sausage Factory is doing ok. Like everyone in the hospitality industry we have had to make tough decisions to make our venue work, with only 12 of 35 seats able to be used at a time. Were keeping it to two nights, doing a set menu, two hour sittings, and staffing it ourselves with the help of one other member of staff. And the truth is The Sausage Factory has never been better, weve never been more conscious of the love and support of our community, and its just a real pleasure to be there with you. Service is the highlight of my week. Talking shit, drinking beer and occasionally bringing you a beer too. But back to Chrissys Cuts. She was our first baby. She led to The Sausage Factory and Sausage Queen Brewing, and even though we didnt manage to scale that product into retail to the levels needed to really make it work, were pretty convinced we make (and will continue to make) the best sausages in the country. But in business you need to constantly adjust and adapt and pivot to the things that are really gaining traction and working financially and sometimes be pretty ruthless with the ones that arent. And thats what were doing. If anything, this pivot gives us even greater freedom to take the boat out even further and continue both Jim and my constant obsessions with the hundreds and hundreds of often ancient sausage traditions of the world (and inventing new ones). 09.01.2022 Our home is reopening! Sort of! From this Friday you can drink in at The Sausage Factory___ for our version of phase one, while we can only seat ten people. The cooked sausages will be back in time, but for now were going to open for drinks only. New bar hours will be 5-8pm, Fridays and Saturdays. Takeaway sausages and booze also available. Well also continue to open 5-7pm Tuesdays for Dully Locals pickup and takeaway everything. See you then lovelies. Ive missed you.

06.01.2022 With restaurant dining gone for now, demand for something a bit better than your average fare is taking off in supermarkets. Our sausages use only whole cuts of 100% certified free range meat, and are unprocessed, which means no artificial preservatives or nitrates. So theyre indeed a bit different to your usual snag.

If you have a non-standard vessel I will eyeball it for a non-standard price. Wide mouth jars recommended, Tupperware also works to a certain extent.
