21.01.2022 Water quality: The importance of good brewing water. The water you use is very important to the quality of your coffee. Water, on average, does make up 98% of your brewed coffee. Use filtered or bottled water if your tap water is not good or has a strong odour or taste, such as chlorine. If you’re using tap water, let it run a few seconds before filling your coffee pot, and be sure to use cold water. Avoid distilled or softened water.

20.01.2022 A quick glance at what happens behind the scenes in the quality control room at the roastery in our Brunswick HQ. Here we have Allan Yeah, head roaster, sample roasting and cupping some fresh season, new crop coffees from trusted specialty green coffee suppliers that we've been dealing with for many years. The protocol is universal for sample roasting and cupping around the world.... Sample roasting is exactly that! roasting a small sample of coffees to see its potential and to get an idea of its characteristics. From here we take those coffees and we do a 'cupping' with it. Cupping is the practice of flavour and quality evaluation of coffees, where a specific amount of coffee is steeped in a certain amount of water to "brew", and as this brew cools we are assessing a multitude of taste and aromas. All this is so we can best determine if it is a coffee we would like to purchase and to understand the coffees best intentions, deciding what would be its best fit, either a blend or showcased on its own as a filter roasted single origin etc. @honchoseung
