22.01.2022 Gluten Matters is thinking of running a Kids Club (for 7 - 15 year olds) this school holidays, 1st Week, 14th Dec to 18th Dec. We will keep your kids occupied, fed (completely gluten free of course!) and entertained for the day from 9am to 4pm. It’s a great way for Coeliac kids to meet other Coeliac kids. At this stage our programme would include activities such as Cleland Wildlife Park, Botanic Gardens, Museum and Art Gallery, Glenelg, Capri Cinema and Melba’s Chocolate Fact...ory and the Berenberg Strawberry Patch. All activities will be fully supervised by Society Staff (DHS and Police Checks in place) and COVID-Safe measures will also be in place. Price per day would be $70 per child, inclusive of transport, food (lunch/drinks and snacks) and activities entrance fees. Pocket money to buy additional treats during outings is to be provided by the parents at their discretion. We were wondering how many of you would be interested in something like this? 10.01.2022 Whip up this quick simple treat in no time! (The icing pictured is a bit melty (whoops!) so remember to place your icing in the fridge for 10 mins to firm up before use and it will sit perfectly once piped). Cupcake Recipe: 125g butter ... 3/4 cup caster sugar 1tsp vanilla extract 2 eggs 1 1/2 cup GF plain flour 1tsp GF baking powder 1tsp xanthan gum 1/2 cup milk Mocha Icing 125g butter 2 cups GF icing sugar 1tbsp cocoa powder 1tbsp instant coffee 1tbsp milk Cupcakes 1. Preheat oven 180C & line a mini cupcake tray with cupcake pans 2. Cream butter & sugar 3. Add vanilla & eggs & mix 4. Add baking powder, xanthan gum, milk & half GF flour & mix 5. Add other half GF flour 6. Spoon into cupcake pans (3/4 full) 7. Bake 12-15 mins until golden 8. Cool cupcakes for 10 mins Icing 9. Cream butter. Add icing sugar gradually while mixing 10. Add cocoa powder & mix 11. Mix instant coffee and tbsp of milk together to dissolve 12. Add milk coffee combination to icing & mix till smooth 13. Pipe onto cool cupcakes 14. Enjoy!!!
