23.01.2022 Recipe of the week! MUSTARD CHICKEN SKEWERS Ingredients:... - 1 tablespoon apple cider vinegar - 2 tablespoons Dijon mustard - 3 tablespoons seeded mustard - 300g chicken breast fillets, cut into 3cm cubes - 2 tablespoons olive oil - 1/4 teaspoon salt - 1/4 teaspoon pepper - 1 garlic clove, crushed Method: 1. Combine the vinegar, 1 tablespoon of Dijon and 1 tablespoon of seeded mustard together and coat the chicken pieces with it. Cover the chicken and place in the refrigerator for at least 2 hours 2. Soak wooden skewers in hot water for 30 minutes before use 3. Mix together the oil, salt and pepper, garlic and the rest of the mustards in a small bowl 4. Thread the chicken pieces onto the skewers 5. Heat the grill plat on high heat 6. Place the skewers on the grill and brush with the mustard oil 7. Grill for 2 minutes on all four sides, brushing each time with the oil Servings: Serves 2 Prep time - 10mins (plus marinating) Cook time 8mins Screen shot the recipe and give it a try! 12.01.2022 Client recipe of the week Each week/fortnight we will be posting some of our clients favourite healthy recipes for you all to share and try This weeks recipe from Barb E is: Cranberry, Avocado, Spinach & Chicken Salad ... Ingredients: Dressing 1/4 cup olive oil 1/4 cup canola oil 2 tsp orange zest 1/4 cup fresh orange juice 2 Tbsp fresh lemon juice 2 Tbsp honey 2 tsp dijon mustard 1/4 tsp salt 1 Tbsp poppy seeds Salad 1 lb (approx. 450g) chicken, grilled 9 oz (approx. 250g) baby spinach 2 medium avocados, cored and diced 1 cup crumbled feta 3/4 cup sliced almonds, toasted 3/4 cup dried cranberries 1. Add olive oil, canola oil, orange zest, orange juice, lemon juice, honey, dijon mustard and salt to a blender. Pulse until well emulsified. Pour into a jar and stir in poppy seeds. Refrigerate until ready to use. 2. Add all salad ingredients to a large bowl. Pour dressing over top and toss to evenly coat. Serve immediately. Servings: 4 servings Prep Time - 20 minutes Cook Time - 10 minutes Total Time - 30 minutes I know I can't wait to try it! 08.01.2022 Recipe of the week! RICOTTA STUFFED CHICKEN Ingredients... - 2 x 150g Chicken breasts - 300g ricotta - 1/2 cup Parmasen cheese, grated - 2 cups baby spinach, chopped - 1 egg - 1 tablespoon flat-leaf parsley, roughly chopped - Salt and pepper, to taste - 3/4 cup chicken stock Method: 1. Preheat the oven to 200 degrees Celsius 2. Pat dry the chicken breasts. Cut slices from the top down into the breasts, about 1 & 1/2 cm apart, that stop 1cm from the bottom. 3. In a medium bowl, mix together the ricotta, half of the parmesan, the baby spinach, egg, parsley and a good couple of grinds of salt and pepper. 4. Stuff the ricotta mixture in between the slices in the chicken breasts. Divide the mixture evenly between the two chicken breasts. 5. Place the breasts into a baking dish that would hold them snugly. 6. Gently pour over the stock and sprinkle the rest of the parmesan over the top. 7. Bake in the oven, uncovered for 30 minutes, or until the breasts are completely cooked through. 8. Serve warm with a side of salad. PRAWN CHOY SUEY Ingredients:... - 1 large egg - 2 tablespoons sesame oil - 1 teaspoon corn flour - 2 tablespoons water - 1 small onion, finely chopped - 1 garlic clove, finely chopped - 1/2 tablespoon fresh ginger, minced - 1 spring onion, sliced - 1 medium carrot, cut into match sticks - 200g prawns, deveined and peeled - 1 teaspoon oyster sauce - salt and pepper - 2 cups cooked long grain brown rice - 1 tablespoon chives, chopped - 1 tablespoon soy sauce Method: 1. Whisk the egg in a small bowl for 1 minute until light and fluffy 2. In a medium wok, heat up 2 teaspoons sesame oil over medium heat. Pour the egg in and spread out into a thin omelette. Cook for 2 minutes each side. 3. Remove from the wok and cut into thin 2cm slices. Set aside 4. Wipe the wok down and add the rest of the rest of the sesame oil. Heat to high heat. 5. Mix together the cornflour and water and set aside. 6. Fry the onion, garlic, ginger and half the spring onion for 1 minute. 7. Add the carrot and the prawns and cook for 1 minute, stirring all the time. 8. Add 4 tablespoons of water. When it starts to boil, add the oyster sauce, some grinds of salt and pepper and the cornflour mixture. Stir through quickly. 9. Add the rice, egg and chives and stire to combine and heat through. Add soy sauce to taste. 10. Serve garnished with the remaining spring onions. Servings: Serves 2 Prep Time - 15mins Cook Time: 5-10mins (Plus pre-prepared rice) Be sure to take a screen shot of the recipe and try it out!
