18.01.2022 Happy Sunday Balwyn crew! Officially 1 more sleep until we open tomorrow (omg yay), so, we thought you should meet one of our newest additions to the team, Katie! We asked her a few questions so you guys can get to know her as well as we do. What Class Do You Love To Teach?... I do love to teach a good solid vinyasa yoga class, preference with added heat. I love to see my students get lost in their practice, connecting movement and breath. I like delivering a creative yet simple sequence with that added challenge for people who wish to take it. I think it’s important to remind students however, to not compare themselves to others but to have fun in their practice, move with determination and perseverance but always caution whilst looking after their bodies. Why CorePlus? Mindful Movement for Everybody. I love how CorePlus has a balanced approach to being active, and welcomes everybody. From the heat, the strength, the cardio and of course the creative yoga flows, it has a mixture of all my favourite things when it comes to exercise. I feel inspired by my students every time I teach at the welcoming studios. You become part of the CorePlus team, you become part of the CorePlus family!! I feel empowered by helping others in their journey, being part of the community and seeing people achieve their goals. Favourite Yoga Pose/Exercise? I will give you both! I am drawn towards any type of arm balance pose but honestly, I think my favourite yoga pose has to be DownWard Facing Dog - The familiarity of the pose, the stretch it gives to the entire body as well as a strength builder. We come back to DownWard Dog many times through a vinyasa flow and yet every time I visit this pose it changes. That awareness that I have of my body in this shape, and how it can change so much, is an acceptance of where I am at every time I step on the mat. I love most forms of exercise, the reward for lifting heavy weights and feeling strong, but I have to say cardio is my favourite form of exercise, especially running. I am a keen runner and love the freedom of putting on a pair of trainers and being able to run anywhere: exploring the parks, the trails, and even the beaches. For me running is my relief, there is nothing like being outside in the fresh air and letting my legs take over, and my mind free for 60 mins, or more....

15.01.2022 Sundays are for food, this time we’ve got a savoury dish. This one is for our veggie/vegan friends out there - you are more than welcome to add tofu or chicken if you’d like! Red Thai Veggie Curry: INGREDIENTS-... 1 cups brown jasmine rice or long-grain brown rice, rinsed 1 tablespoon coconut oil or olive oil 1 small white onion, chopped (about 1 cup) Pinch of salt, more to taste 1 tablespoon finely grated fresh ginger (about a 1-inch nub of ginger) 2 cloves garlic, pressed or minced 1 red bell pepper, sliced into thin 2-inch long strips 1 yellow, orange or green bell pepper, sliced into thin 2-inch long strips 3 carrots, peeled and sliced on the diagonal into -inch thick rounds (about 1 cup) 2 tablespoons Thai red curry paste* 1 can (14 ounces) regular coconut milk** cup water 1 cups packed thinly sliced kale (tough ribs removed first), preferably the Tuscan/lacinato/dinosaur variety 1 teaspoons coconut sugar or turbinado (raw) sugar or brown sugar 1 tablespoon tamari or soy sauce*** 2 teaspoons rice vinegar or fresh lime juice Garnishes/sides: handful of chopped fresh basil or cilantro, optional red pepper flakes, optional sriracha or chili garlic sauce METHOD - 1. To cook the rice, bring a large pot of water to boil. Add the rinsed rice and continue boiling for 30 minutes, reducing heat as necessary to prevent overflow. Remove from heat, drain the rice and return the rice to pot. Cover and let the rice rest for 10 minutes or longer, until you’re ready to serve. Just before serving, season the rice to taste with salt and fluff it with a fork. 2. To make the curry, warm a large skillet with deep sides over medium heat. Once it’s hot, add the oil. Add the onion and a sprinkle of salt and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes. Add the ginger and garlic and cook until fragrant, about 30 seconds, while stirring continuously. 3. Add the bell peppers and carrots. Cook until the bell peppers are fork-tender, 3 to 5 more minutes, stirring occasionally. Then add the curry paste and cook, stirring often, for 2 minutes. 4. Add the coconut milk, water, kale and sugar, and stir to combine. Bring the mixture to a simmer over medium heat. Reduce heat as necessary to maintain a gentle simmer and cook until the peppers, carrots and kale have softened to your liking, about 5 to 10 minutes, stirring occasionally. 5. Remove the pot from the heat and season with tamari and rice vinegar. Add salt (I added teaspoon for optimal flavor), to taste. If the curry needs a little more punch, add teaspoon more tamari, or for more acidity, add teaspoon more rice vinegar. Divide rice and curry into bowls and garnish with chopped cilantro and a sprinkle of red pepper flakes, if you’d like. If you love spicy curries, serve with sriracha or chili garlic sauce on the side. Source: https://cookieandkate.com/thai-red-curry-recipe/

12.01.2022 We know times are tough, but its about finding the little moments throughout the day that make you smile! We asked one of our awesome Mat Pilates teachers, Hannah, what was helping her through lockdown. Here's what she said: 1. Getting outdoors. Discovering new walking tracks either with a friend or listening to a great podcast. 2. Cooking. With obviously more time on my hands getting creative in the kitchen has been a real highlight. ... 3. 12.01.2022 Perfect meal for lunch or dinner? Yes please! Veggie Teriyaki Stir-Fry with Noodles is a light and healthy meal, jam packed with flavour! Check out the recipe and method below: Ingredients -... 1. 4 ounces soba noodles, brown rice noodles, spaghetti or long noodle of choice 2. 2 tablespoons extra-virgin olive oil or avocado oil 3. 1 medium red or white onion, halved and thinly sliced 4. teaspoon fine sea salt 5. 6 cups thinly sliced mixed vegetables* 6. cup teriyaki sauce, or more as needed 7. 1 to 2 teaspoons toasted sesame oil, to taste 8. 1 teaspoon sesame seeds, plus more for garnish 9. cup thinly sliced green onion, for garnish Method - 1. Bring a pot of water to boil and cook the noodles until al dente, according to package directions. Drain and rinse well to remove any excess starch. Set aside. 2. Meanwhile, warm a large skillet over medium heat. Add the oil, onion and salt. Cooking, stirring occasionally, until the onion is tender, about 4 to 6 minutes. 3. Add the remaining vegetables and cook until they are tender and caramelizing on the edges, stirring every minute or two. Given the volume of vegetables, this will take about 10 to 15 minutes. 4. Once the vegetables are done, add the noodles and cup teriyaki sauce to the pan. Stir to combine, and cook just until the ingredients are all warmed through, about 1 minute. Feel free to add more teriyaki sauce if you like your noodles extra-saucy. 5. Remove the skillet from the heat. Add toasted sesame oil, to taste (a little goes a long way/toss with tongs if you need help mixing the noodles into the veggies). Add the sesame seeds. 6. Serve the noodles in bowls with sliced green onion and a little sprinkle of sesame seeds on top. Leftovers keep well, covered and refrigerated, for up to 4 days.
