25.01.2022 The delicious multicultural lunches continue........ Sandra from our Tullamarine office was up this week. This was the lunch I shared with Tulla team, its called a Completo Its the Chilean version of a supersized hotdog. ... Its a sausage with the works with toppings like chopped tomatoes, avocados, mayonnaise, sauerkraut, Pebre (ají hot pepper, coriander, onion, tomato,garlic.), mustard, and chili sauce. Some people are very pedantic about the order these are added but its widely agreed that more is better. I came to Australia when I was just 3yrs old at the time my mum was fleeing from the military coup. My parents, mum especially made sure we grew up with all the traditions. My 2 older brothers played traditional music (Andean Music), she sang, my youngest brother played soccer and my sister and I danced, My younger sister missed out on all that fun. We did all this at the Chilean Club in North Melbourne, It was one of the largest Chilean communities in Melbourne, and these were always readily available there. We are no longer part of that club but always enjoy a completo or 2 at birthdays or get togethers or even just "because" theyre a favorite of pretty much everyone. This is typical family get together food and when we went back to Chile, my girls were wrapt to see these available at markets, street stalls and restaurants.

19.01.2022 We have had a few cultural lunches in our branches this last week, lets start with Tony Bright, our QLD Branch Manager..... My family arrived in Australia in 1813 travelling from Scotland as blacksmiths and settled south of Sydney in the Goulburn area. My great, great grandma chased Lightning Jack and his band of thieves off her land with a shotgun when he came and asked to water his horses. More recently my grandfather served in WW1 in France and was wounded, my great uncle ...Andy was in the first boats to land on Gallipoli and my father was a jackaroo in the 40s and 50s in central northern NSW. I am a seventh generation Australian and there is nothing more Australian than a shrimp and lamb on the BBQ with a potato bake and beer. Looks delicious Tony!!! 11.01.2022 The lovely Anjelica from Tullamarine also fed her branch last week I may have been born here but there is so much history and culture to how I got here today. My mums side were born and raised in Sicily and migrated to Australian when she was 5 years old. My dads side is a bit of a mix, my Nonno was born in Romanian to an Italian father and Romanian mother. They moved to Florence when my Nonno was 3 years old and it soon became home. My Nonna is from right up the top of the... boot in a small town called Paula in Trieste. During the war Paula was taken over and forced my Nonna and her family to come to Australia and settle in Geelong. Paula is now considered part of Croatia, but still has a very Italian influence. Fast track many years and I was born into a big fat Italian family. Coming from two very European sides there was no doubt I was to have a very Italian upbringing filled with lots of traditional Italian food, family and culture. My Nonna and Nonno on my dads side have been a very big part of my life and influenced the foods I eat today. I undertook many cooking lessons from my Nonna in the recent years to learn all the traditional amazing foods I grew up eating. The two dishes I made today are very special to me and a big part of our culture. Gnocchi traditionally originated from the north of Italy as the climate was suited to growing potatoes. My Nonna being from the north cooked gnocchi, half sugo (red sauce) and half pesto at every weekly family catch up growing up and it is a tradition I plan to carry on. Much like gnocchi, crostoli is something that was cooked every single Easter and Christmas or any time the Italians came to Australia to visit. Although, traditionally from Italy both these dishes are eaten, enjoyed and loved by many people and cultures today. Buona Patite

07.01.2022 Last one for this week is the lovely Renee from WA For lunch today I made Dutch veal croquets which we ate with lashings of mustard. These were my mothers speciality and were eaten only at Christmas time. They are also called Bitterballen if rolled into small ball and are often accompanied with a beer. My mothers family left The Haag, Holland and arrived in Fremantle in 1949. First her father and 2 eldest brothers came to get jobs and settle in, and then my mother came w...ith her Mum (my Oma) and youngest brother. They had suffered through Nazi occupied Holland and after the war they wanted to make a peaceful life in Australia - where they were told kangaroos roamed the streets everywhere. My grandfather opened a hairdressing salon, farmed, installed antennas and owned Johnnys Milk Bar (named after their youngest son) on Cottesloe Beach. They were battlers and turned their hand to anything to make a living. My fathers side of the family is harder to trace as he passed when I was 3 years old and was an only child. His side of the family originated in Chile, then moved to Wales (serving in WW1) and then West Australia. My father was born on Eclipse Island where his parents lived in a lighthouse. My father was an auto electrician but also served in the Australian Air Force. Anyway as my mum always said before a family meal.. EET SMAKALEJK!!! 07.01.2022 Our next employee to feed the branch was Andy from Notting Hill A bit of a back story - my family is made up of a mix of different races My sister Kathy and I were both adopted from the Philippines as babies, by my two Australian parents Ross and Barb.... On my fathers side - he was one of three boys to my Nana and Pa. They then decided to adopt twin girls from Australia. My Uncle and Aunty also had my two cousins Chris & Nick, then decided to adopt their third, Grace, also from the Philippines. Libby my cousin met Alvaro in Ecuador, married him and now have had two beautiful children Alexander and Sophia. Closer to home my sisters partner Kosta is a first generation Greek. This is where our United Nations inspiration drew from. The spanakopita recipe is his mothers and if she lived closer, it would have been made by her!!
