25.01.2022 Vegetable noodles. You can make noodles out of carrots, parsnip, sweet potato, zucchinis, cabbage and many others. Use your imagination. Much more nutritious than regular noodles made from flour and water. If you don't have a mandolin or spiralizer, just use a peeler to get thin strips. Toss your strips in butter, coconut oil or a little stock and serve with curries, casseroles or bolognaise. They taste fantastic. ... These are zucchini noodles (zoodles!!).



24.01.2022 What's in your kids lunchbox today? Aim for quality protein, vegetables and healthy fats with minimal starchy food and you are on the right track. Today we have a chicken drumstick, tomatoes, cucumber, carrot, dried apricots, homemade seed muesli bar and some acidophilus yoghurt. Oh, and a banana. That should do the trick.

24.01.2022 I was a little shocked to find this on FB recently- a dead frog discovered in a packet of salad leaves. Ewww. After paying high prices for these leaves, and often finding they are spoiled within a day of buying them, I am determined never to buy them again. Today I was given some gorgeous fresh Ceylon spinach with stalks ready for planting. Apparently it grows like a weed. I can't wait to get these babies planted in my garden.

24.01.2022 Why do I call myself the Country Dietitian? Well I grew up on a sheep and cattle property in central Qld where we lived off the land. Home grown mutton and beef (with all the fat!), fresh eggs, fresh milk and cream and home grown vegies were the staples in our diet. We were strong healthy kids with barely a day of illness. These days I still live in the country albeit a little less isolated, we are only 15 min from the nearest town and only 1.5 hours from the nearest city of... Cairns. 40+ years on and it is often harder and more expensive to provide a healthy diet for my family because real food often costs more than fake and processed food. But it's worth it. Quality food pays off. Plenty of healthy fat from meat, dairy, eggs and even coconut. Good quality grass fed meats and dairy. Free range chicken and eggs. Local fruit and veg. Cultured foods. This is the basis of a healthy diet and these are the superfoods that we all need to thrive. I feel blessed to be able to live in the country with access to good quality food. But almost everyone living in this lucky country has access to good food every day. Avoid the junk. Just eat real food and you can't go too far wrong. #jerf



24.01.2022 Home-grown dehydrated plums and mangoes plus home-grown macadamias for sale in my office, 33 Alice St, Atherton. Come and grab some. Open 9-5 mon-thurs and 9-3 fri. The kids have been busy collecting, drying and packaging it all to earn themselves a little pocket money.

23.01.2022 Lunch for a primary schooler and lunch for a teenager. I use Planetbox from biome.com.au - they have a smaller version (Rover) and a larger version (Launch). Today it's pizza for lunch (the base is made from almonds and eggs - a Chef Pete Evans recipe) plus pear cake, veggie sticks, hummus and the teenager gets meatballs with homemade sauce. ... My tip for the day: Make it from scratch if possible and try to avoid refined white flour.

22.01.2022 Scientists have come up with a new term to describe people who obsess about eating clean whole food. They are calling it Orthorexia Nervosa, an eating disorder. Now whilst I admit there are some people that probably go a little overboard and do obsess, the majority of people I know who choose to eat real food are not obsessive, just concerned educated people like myself who choose to feed our families the kinds of food that nature intended us to eat. 21.01.2022 It can be so tedious trying to think of new and exciting ideas for school lunchboxes that will keep your kids happy as well as healthy. Lunchboxes should contain lots of vegetables and yet how often do vegies get overlooked for less nutritious choices like sandwiches or biscuits? I love doing vegetable fritters for my kids. They are sooo yummy your kids will try and eat them straight out of the pan, and they are simple to make.... Grate some carrot, zucchini and sweet potato, add some salt, pepper, almond meal, fresh herbs and lemon zest, squeeze out the excess water and stir in 2-3 eggs. Fry in coconut oil. This is loosely based on Chef Pete Evans vegetable fritters in Family Food. Also in this lunchbox are sugar snap peas, roasted parsnip, chicken leg, fresh coconut, cherry tomatoes, bliss balls and a cinnamon almond muffin.

18.01.2022 Having fun with recipes in Chef Pete Evans latest cookbook Family Food. We had a big cook up here today so there should be plenty of healthy choices for lunchboxes during the week. Five seed paleo bread, veggie fritters, green goddess dressing and banana bread. All made from wholesome ingredients like nuts, eggs, vegetables and fruit. Mmmmm!

18.01.2022 Counting calories is a thing of the past. Back at university we were taught that calories (or kilojoules) were the best measure of how potentially fattening a food was. Fat had more calories than protein and carbohydrates, therefore foods high in fat were generally higher in calories than foods high in sugar, so low fat diets were deemed the best way to help people lose weight. More and more studies reveal this basic theory was completely flawed. High fat foods like butter,... cream, olive oil and coconut oil are so wonderfully healthy for us, and not nearly as "fattening" as was once thought. High sugar foods and starchy foods on the other hand will contribute far more to weight gain than fats and oils. Another reason for considering a lower carb higher fat way of eating, and throwing away your calorie counting book! This article is from the Feb edition of the Australian Women's Weekly.

The US Academy of Nutrition and Dietetics (the world's largest organisation of nutrition professionals, mainly Dietitians) have stated that they support the "decision to drop dietary cholesterol from the nutrients of concern list and recommends it deemphasize saturated fat from nutrients of concern, given the lack of evidence connecting it with cardiovascular disease". Saturated Fat. The nutrient that we all thought would clog our arteries and increase ...our risk of heart disease. The evidence has been clear for a very long time that saturated fat is safe to eat, in fact it's very good for us. Yet the food companies and many health authorities have been telling us to replace saturated fats with harmful processed vegetable and seed oils. And the rates of heart disease and chronic disease has continued to escalate. 14.01.2022 What a crazy, wild and exciting year 2014 was, especially in terms of food and health. It was the year that many health professionals including myself discovered that many "facts" we thought to be true about food and nutrition were actually not backed by very good scientific evidence. It is so liberating and wonderful to now know so many more truths about the relationship between diet and health. It will be interesting to see how 2015 unfolds, and let's hope the health autho...rities make some sensible changes to the current outdated dietary recommendations. How can anyone know what is healthy to eat when they get told to "eat everything in moderation"? Moderation means completely different things to different people. And for the majority of Australians who believe fat in foods is fattening, moderation means having lean meats and low fat everything. No thanks. Dietary fat especially saturated fat is essential for good health. Butter, cream, cheese, eggs, coconut, meat fat - these all have a huge part to play in a healthy diet. High carb foods like bread, rice and pasta have a limited role to play in a healthy diet and large amounts of these will contribute to weight gain. If you want some good holiday reading, read "Big Fat Surprise" by Nina Teicholz. It's a must-read for anyone wanting to know how we got it all so so wrong. 12.01.2022 I had the absolute pleasure of attending the Paleo Way workshop yesterday in Cairns. This way of eating makes perfect sense to me and I'm looking forward to incorporating even more paleo/real foods into my diet. For those who don't fully understand paleo, it's all about healing and taking care of your gut - through bone broths, fermented foods, quality meats including organ meats, lots of vegetables and heaps of healthy fats. It's about staying away from inflammatory foods. And it's about satiety and happiness. I recommend this workshop to everyone - it is money well spent.

10.01.2022 Oh my. If you've never cooked or at least tasted a true beef bourgignon before, it is so good. The depth of flavour from red wine, thyme and orange peel is just amazing. This is a great way to use up cheap cuts of meat - I used shin. My recipe came from Nourishing Traditions by Sally Fallon. Served with creamy mashed potato it was incredible.

08.01.2022 Today I attended a luncheon with an inspiring and forward-thinking speaker Joel Salatin, a regenerative farmer and author from the U.S. He raised some interesting points about ecology and sustainability and diversification, and how we need more farmers if we're going to survive for future generations. With the recent berry saga, it is even more evident than we all should be buying local food as much as possible. 08.01.2022 I'm loving all the stonefruit at this time of year. Our plum tree is literally dripping with sweet juicy plums and we're having trouble keeping up. 06.01.2022 It's so good if you can access seasonal produce from local farmers (even if they are blemished or not quite perfect). It's avocado season here, and I am so lucky to have been given a huge box of them!! Now...just what to do with so many ripe avo's. Luckily they are a great and healthy addition to any meal and even in lunchboxes. But it looks like I'll have to freeze quite a lot to go into smoothies and my fave Quirky Cooking choc avo mousse. Mmmm!

04.01.2022 Ginger and turmeric. Well they told me it was easy but I didn't believe them! And here I am with my very first harvest of these gorgeous bulbs. It's so exciting to grow your own fresh organic produce, and so much cheaper too. I use heaps of these in my cooking and they are so good for you. My herb garden is just about perfect now even though to some it might look like a jungle. Parsley, chives, thyme, rosemary, basil, Thai basil, mint, coriander and now...ginger and turmeric. Happy days!

03.01.2022 Love Chef Pete Evans and his gorgeous recipes and his whole philosophy on healthy eating. You don't have to be completely paleo to appreciate his paleo recipes. It's just real food made from scratch using quality ingredients. Last night we had this very tasty Meatzza (yes it's a meat base) from "Family Food" and tonight we had this beautiful Lamb Harira from "Healthy Everyday". Both were winners in our household!!
