25.01.2022 Just made a soup-er quick impromptu soup with free range chicken stock, kale, cauliflower, mushrooms, sea salt and chilli. It may not look pretty but it's nutritious, yummy and a wonderful winter warmer



24.01.2022 These brownies may not be THE most nutritious (or prettiest) food on the planet, but they are a great higher-in-fibre-and-protein alternative to the ones filled with white flour and refined sugar. Oh, and they’re DELICIOUS! While the brownies are not quite sugar free, maple syrup is rich in B vitamins, manganese and zinc, as well as several anti-oxidants. The fibre and protein from the almond and coconut flour help to increase the nutritional profile of this dessert and lower... the glycemic index, which lessens the impact on blood sugar levels. The butter, of course, is a source of vitamin A and butyric acid-great for gut health! These were made based on a recipe by The WholeFood Co, with a few amendments. Ingredients: cup coconut flour 1/3 cup raw cacao 1 tsp baking powder 2/3 cup almond meal cup pure maple syrup cup whole milk cup melted butter 1 cup chopped dark chocolate (at least 70% cocoa) 1.Mix together coconut flour, cacao powder and baking powder and almond meal. 2.Combine maple syrup, milk and butter and stir into dry ingredients. Add chocolate. 3.Pour into a greased, glass baking dish. 4.Bake at 160C for 30-40 mins Note: Butter and milk can be substituted for coconut oil and almond milk (same amounts) to make this dessert dairy free/vegan.

16.01.2022 Smashed avo & feta on turmeric sourdough that I picked up from #akoonahparkmarket on the weekend Modern, mass-produced bread often has extra gluten, extra yeast, oils such as canola, soy flour, as well as emulsifiers and preservatives added. The fermentation process of sourdough can make the bread easier to digest, making the nutrients easier for us to absorb and utilise (and in my opinion the taste and texture is much better anyway!)

14.01.2022 This morning as I was preparing my eggs for poaching, I noticed one egg had two yolks. Excellent, I could do with the extra nutrients, I thought to myself, as my hectic schedule has left me preparing quicker things for breakfast and I have not been eating many eggs lately. It makes me so sad to see people avoiding eggs due to their outdated and undeserved reputation for being artery-clogging cholesterol bombs. Cholesterol is essential for a myriad of body functions, includ...ing building and maintaining cell membranes, vitamin D synthesis, making bile and producing steroid and sex hormones. Current research shows that eating eggs is not likely to raise cholesterol levels in the human body. In fact, egg consumption may have the opposite effect, as the body will regulate its production of cholesterol according to dietary intake. The yolk contains the majority of nutrients in the egg, with the white part being the better source of protein. Eggs are a good source of vitamins A, D, E and K, as well as several B vitamins, choline and lecithin. They also contain antioxidants such as lutein and zeaxanthin, which give the yolk its rich, yellow colour. Of course, always choose organic and free range when possible. 09.01.2022 Now that I've finally finished uni, my new roster enables me to have a mid week sleep in, followed by an elaborate omelette. Omelettes are a fantastic way to incorporate a bunch of vegetables into your first meal of the day, and this one is full of phytochemical-rich broccoli, tomato, silverbeet, onion and green chilli, as well as a bit of jersey milk and haloumi. It's so packed with goodness I couldn't flip it over, leaving it looking less omelette-y and more scrambley. Yum!

08.01.2022 Lettuce leaf tacos make a super quick, easy and delicious meal and are a great alternative to regular taco shells. These are made with kangaroo, avocado, tomato and goats cheese, swap kangaroo for tempeh strips for a vego alternative :) YUM!

08.01.2022 Had another very busy day delivering Jamie Oliver’s Learn Your Fruit and Veg program at a couple of primary schools It’s an amazing program that helps introduce some basic cooking skills and get the kids excited about fruit and veg. Loved the snazzy chefs’ hats that some of the kids made just for the incursion, too! 06.01.2022 If you're feeling like a light and veggie- filled, but still winter warming dinner, these mushrooms are perfect! Stuffed with broccoli, pumpkin, asparagus and cherry tomatoes and pine nuts, topped with goat cheese and grilled for 10 minutes. Yum!
