23.01.2022 Blu ’61 is available in the shop now. The cow’s milk blue is aged over three months using local sweet wine Passito di Raboso and wine-soaked cranberries. With a paste that grows soft and creamy with age, and a thin red rind paved with berries on top, Blu ’61 has a striking and memorable appearance. Aromatic and intense notes typical of blue cheese are balanced by sweet and fruity tones with scents of cherry. Wine flavors are not invasive but instead balance out with the creaminess of the paste, creating an intensely hedonistic cheese that’s ready to take the place of dessert.

12.01.2022 Tête de Moine is arrived in the shop now. Tête de Moine, literally monk’s head, is a cylindrical semi-hard smear cheese that weighs around 800 grams and has a very fine dough that melts a little in the mouth. It is not cut, but shaved into thin, twirly rosette shaped slices using a special knife such as the Girolle or the Pirouette. As it is shaved, the surface of the cheese that comes into contact with the air is increased. Firstly, this alters the structure of the cheese dough and, secondly, it helps the full aromatic, melt-in-the-mouth taste to develop. The monks in the Bellelay monastery in the modern-day Bernese Jura sliced their Tête de Moine cheese with the same kind of raised knife. According to religious tradition, the monks used the cheese as a means of payment as early as the 12th century.

The milk is made up of native Friesian, Brown Alpine and Red Cows. Moro's cheeses are made by cheese makers at the dairy under his specifications, Moro then takes it from there. In this case, wheels are pierced, place in barrels and bathed in Fior d...’Arancio DOCG (a sweet wine produced with Moscato grapes grown in volcanic soil in Colli Euganei in the province of Padua, Veneto) for about 30 days. Finished on wooden planks, Fior d'Arancio is finally topped with orange peel. Literally meaning "orange blossoms," this ubriaco, "drunken," cheese is sweet and salty, with complex aromas of honey, peach, orange blossom and wildflowers.
