25.01.2022 It’s Sunday.. let’s bake Sweet cravings these muffins are divine! It’s pretty easy to throw together a healthy batch with the basics. 125g butter (I personally love butter)... 1/4 cup coconut sugar 1/4 cup maple syrup 3 x eggs 1 & 1/2 mashed banana 1 x Teaspoon vanilla essence 1 x Teaspoon cinnamon 90 g dark organic chocolate 2 x cups self raising flour or I use spelt flour and baking soda. 1/4 cup almond milk Substitute ingredients to make it suit your dietary requirements.. Preheat oven to 180 degrees. Grease a 12 pan muffin tray. Using an electric mix, mix the sugar, maple syrup and butter till creamy. Add eggs one at a time and mix to combine. Using a fork, stir in banana, cinnamon and vanilla essence. Once combined stir in 1 cup of flour, add 1/4 cup of milk, and finish off with the flour. Stir through the dark chocolate and spoon into muffin tray. I did a different topping for each row. One had walnuts, one had caramel, one had granola and one had extra cinnamon. Enjoy

16.01.2022 Last Saturday saw the first race of the Spartan National Series 2020 (and my first ever series race) take place in the beautiful location of Oberón NSW. Race 1 of the series was the 21km beast with 31 obstacles and it certainly didn’t disappoint. What a great event and location. I loved the cross country style course and the community as always was amazing. Thanks @spartanraceau for another great opportunity to explore new places and to the people who volunteer there time ...to make this possible. For this race, I had to register on the day, which left me overthinking everything. I started to doubt myself, feeling I wasn’t good enough to race elites. Worried I wouldn’t place top 10 which was my goal. Thank you to my coach @mick_stuart_coach for mentoring me and helping to ever so casually calm me. I was so nervous and indecisive and needed your start line guidance This year, I want to qualify to race overseas and decided last minute (on the day) my best chance was to try place in my age category. I’m such a newbie to this sport and still learning how it all works. At the start line I was stoked to see Bianca who is a fellow elite runner and a part of the Spartan Pro team had made the same decision as me. I knew immediately I’d made a good choice and I’d have a tough race ahead of me. Bianca challenged me, like I knew she would. I failed 4 obstacles and found myself chasing her most of the race as a result. One of the final obstacles was the spear throw.. we where side by side. She got it, I failed. 30 burpees for me and game over, finish line for her. That’s how quickly things can change in these races. Congratulations @pietrasswong I am absolutely stoked to finish second behind this inspirational women with a time of 2:22 and 10th overall (meaning I also achieved my goal of top 10 elites ) I know if I can get my obstacles sorted, I’ll definitely shave a good chunk of time off. This race has left me hungry to do better.. no more self doubt #letsdothis Lastly, congratulations to all who took part, I think it’s perfectly safe to say we are all wearing barb wire wounds as badges of honour this week #whatsnext @ Oberon, New South Wales See more

10.01.2022 My nemesis The Olympus Walk. For the very first time in Oberón, I made it to the end, but couldn’t reach that bell. I was simply sitting to low on the wall and as I reached to hit the bell, slipped, literally falling off the wall into a 30 burpee penalty. So a bitter sweet feeling this time. Stoked I made it so far, frustrated I failed after so much effort. Next time you’re mine #spartanrace @ Oberon, New South Wales

03.01.2022 I’m over a week behind with this post but finally getting it done Day 2 of the Spartan Trifecta Weekend. Saturday arvo, after the Beast, recovery was my priority. ... So it was straight to @rigsrecovery for my all time fav hot/cold contrast therapy soak.. bliss dinner was a big bowl of fettuccine carbonara (yes I cooked, I was craving it ) + I made sure I drank plenty of electrolytes to rehydrate and fell into bed early for a good nights sleep. My fingers and toes where crossed that this self-love combo would help me recover enough to get through Sunday in less pain. And I feel it did.. The 10km Super race was a slow one again for me, but I still did the best I could manage, I wore my hydration vest (wasn’t making that mistake twice) and managed to get through with a total of 2 fails and no cramping woohoo (FYI I failed the twister and rings as my hands shredded.. ouch) and I finished with a 2nd place in elites. The super saw the Stairway to Sparta obstacle reappear, one I’d struggled with the day before due to cramping. But as I approached it this time, I was determined to stare it down and get over it, and I did so stoked to not do more burpees. My happiest moment this weekend was conquering the one obstacle I’ve never completed, the Olympus wall. I got it 2/2 times and I’m stoked. I conquered my nemesis but never fear, I have a replacement.. the twister The sprint for me was a ‘recovery’ run. I didn’t want to destroy myself, especially considering the competition was fierce and the race would be fast with some fresh legs appearing I really just wanted to complete the trifecta Finished 4th. Upon reflection, I can see where I possibly went wrong on the Saturday. Overall, I’m happy with completing the weekend along side Claire Burley my trifecta buddy from the elite races. She was amazing and it was great to race with her (although I mostly saw her back ) Now, after 10 days of blissful recovery, I’m happy to say, today I’m back at it Looking forward to the 2021 OCR season and seeing everyone back out racing together with no border restrictions #spartan #spartanrace

03.01.2022 First first climb back since covid-19 restrictions were lifted in Queensland.. felt so good
