24.01.2022 Yep we are closing for a while. This is not a time to soldier on. Best in our view to bunker down and reduce the spread of this virus. Special thanks to our wonderful staff. We will reopen when calm prevails. Happier times will return!



23.01.2022 Thank the Dutchman Conrad every time you enjoy your favourite chocolate. He worked out how to separate the cocoa butter from the cocoa (powder). Without this the industrialisation of chocolate would not have happened. It enabled chocolate makers to determine the characteristics of the product to make say a bar or a truffle. It also gave us a cocoa drink without an oily residue.

11.01.2022 Big sorry to all our regular Easter patrons!! Let's hope we can get on top of this virus and return to normality. The gardens were at their glorious best this morning. Still lots of colour in the garden beds with a backdrop autumn blush from the trees.

11.01.2022 Blueberry pecan & almond hand cast slab. Just out of the cooling tunnel. We set this using our 70% intense as the blue berries have some lovely residual sweetness. Great way to load up on anti-oxidants!

07.01.2022 Eating the profits! Our fine chocolate range is named after my wife Annelise. Trouble is "she who must be obeyed" thinks naming rights infers eating rights. This has to stop. Wish me luck!

07.01.2022 Why does this bar outsell the others??? Finest couverture stuffed with tender currants. Then hand cast and finished with a covering of crisp roasted hazelnuts and juicy sultanas. Way too much for one to handle. Share with a soul mate or two!

02.01.2022 Tips for a great brownie. Cut with a hot blade. It should be so fudgey that you get best results by chilling slab prior to cutting. Go for that sharp clean edge!

01.01.2022 Remember those 1980's dinner parties? After dinner mints a necessity! Just got these extra thin moulds in from Belgium. We hope to make a mint fondant infused with fresh mint. Now is a good time to develop all those ideas. Keep you posted!!

Shown is the Double Choc Almond Rock Salt & Chilli. People drive miles to secure a stash of these. Ring first and we can put some aside for you!

01.01.2022 What are these newly arrived molds for? Imagine a large dark chocolate champagne truffle. A crispy thin dark chocolate shell covers a rich dark champagne ganache. Divine! But the secret is hidden deep in the centre. A smooth champagne buttercream pearl! Work in progress!!!
