25.01.2022 I almost went the ordered/canteen/tuckshop option today.. It would've been my first all year/ever since my 5 year old started school and he's been nagging me for it all term. I haven't shopped for almost a week and there were none of the 'usual' lunchbox foods in the house. 19.01.2022 Found this awesome fibre-filled, pantry-staples-loving Apple crumble recipe on @taste_team .. search for "Healthy Apple crumble" At this point I'm trying to stretch out the weeks between shops and use up whatever's in my cupboard, over going to the shops for one specific ingredient. This is a snack or dessert that could also be classed as dairy and egg free if you want to go that far, using the substitutions below.... I added 3/4C sultanas and juice of half a lemon (leftover from a meal 2 days ago) to an 800g tin sliced pie fruit apples. Also added nutmeg and cinnamon to the apples. And since we've run out of butter and I dislike using margarine in cooking I used some coconut oil I've had in my cupboard for at least a year instead. To make this low fodmap: swap apples and sultanas for stewed rhubarb and strawberries (unfortunately not a pantry staple). Tastes amazing!! So quick and easy to make - my 2 year old helped make it Enough for 8 serves. Delicious way to add some fruit and fibre to your day.. everyone loved it in our house! x1 x0.25 /x0.5 Fibre 3.5g Protein 5g (approx)

07.01.2022 We ran out of everything!! Adapting recipes is something I love to play around with - through the fails theres always a winner every now and then. I'm always keen on trialing adaptations of recipes that are lower in sugar or higher in fibre. Using an egg substitues is another avenue I try - to help my clients with egg allergies enjoy a wider range of foods. So today we had run out of fresh milk and eggs. Our substitutes were:... Powdered milk Black Chia seeds (white wouldve been better in this instance but you gotta make do). To replace 1 egg: 1Tbsp chia in 3Tbs water, leave for 10 mins before adding to mixture. Reduced caster sugar by half 1C --> Half cup Instead of 1.5C self raising flour, used 1C self raising flour and 0.5C wholemeal self raising flour. I was concerned the mixture wouldn't be fluffy or combine well or would be too crumbly or have that wholemeal after taste.. but nope! 05.01.2022 Found a new milk product.. with "no added sugar". BUT the Nutrition Information Panel (NIP) states sugar is present in it! How can this be? Thankfully the manufacturer of this product has attempted to educate it's consumers, outlining there are naturally occurring sugars in milk (galactose/lactose).. AND there are no added sugars like it claims (instead adding sweeteners), by separating out the added and natural sugars on the NIP. 02.01.2022 Busy busy lives.. kids.. mess.. cleaning. Eliminate the mess and there goes the cleaning. BUT so does the LEARNING. This is my youngest, eating with a spoon from a bowl at 16 months. Our house is certainly not without mess and is definitely busy - I feel like I spend more time cleaning up food than serving it BUT it's all worth it - by 18 months of age, all of my children were eating the food served to them independently (no more spoon feeding, except the youngest when tire...d). Not just them eating yoghurt and fruit from pouches, actually using cutlery and bowls/plates. How?! Through repetition, practise, praise and LEARNING to do it themselves. They all wanted to be independant from a young age (two of them more than the other), so we have always encouraged/embraced them to be independent with their food from the moment they started solids, despite the mess, and even get them to help clean up. In turn, they have developed their own way of eating and have learnt: when they are full, to smell, look at, taste and feel the food - yoghurt through fingers, on the table (not just in a pouch where they don't even see what it looks or smells like), use cutlery correctly, how to eat in a social situation (never ending skill development) and what happens to the mess they make - cleaning the spills, putting their cutlery and bowl in the sink and even washing up at 3 years of age. Using a spoon also contributes to their gross motor skill and speech development - it's not just all about the food, as you can see!
