25.01.2022 When @frankyang.com.au and @fruitnerd asked me to feature in a pho pie promo..this happened. The hours of creative thought involved..chapeau Frank! The making of the PHO PIEall shortcrust, no shortcuts! This winning Pho Pie is a culinary blend of Vietnamese and Australian cooking, that embodies all the nuances of @fruitnerd and I’s bicultural heritage.... For my part, I was in charge of the Pho Pie filling. So, how did I turn the Pho broth into gravy? By combining Western cooking techniques with traditional pho making methods! First, beef chuck steak was braised with tendons in pho broth. A roux was used to help thicken the stew and to make the pho flavour more pronounced, additional broth was added along with 8 aromatic spices: star anise, cassia bark, licorice root, black cardamom pods, cloves, black pepper, coriander seeds and fennel seeds. A potato starch slurry was used to ensure the gravy consistency remained pie worthy. In the oven’s warm heat, the gravy binds to the shortcrust pastry creating that crispy, soft and oozy texture on the first bite. The making of this pho pie, to us, is a sensory experience in itself. 24.01.2022 Unwind In Melbourne cooking was my therapy, but on @PlateofOriginAU cooking was a fierce competition. Most mornings during filming, I would go out for a ride to unwind and honour me time. A delicious snack I enjoyed on the streets of Saigon was bnh tiu stuffed with bnh b (steamed rice cakes). Like hot chips in a sandwich with tomato sauce. Living interstate for almost a decade, has made me realise and appreciate the things he has instilled in me. One of these being, how simple flavours have the intense power to send a message. Dads generally.. arent found in the kitchen. However most Sundays, for breakfast, my dad would send my brother and I down to the local #Vietnamese bakery with a few gold coins while he cooked some e...ggs. A time efficient way to get breakfast on the table but it starved me of the opportunity to learn how he cooked the eggs, until one bed ridden day. For over a decade I wondered how my dad made his eggs. Dad wasnt a great cook, the kitchen was definitely not his domain. Start with my Vietnamese Fish Sauce Dipping Sauce - Nc Mm Chm https://www.duncanlu.com.au//vietnamese-fish-sauce-dipping Heres my dead simple Vietnamese crispy @australianpork (Heo Quay) @kmartaus air fryer recipe.... Serves 3-4 Difficulty: Moderate- youll be right 1kg pork belly 2 tablespoons sea salt flakes 1 tablespoon sesame oil 1.5 L boiling water Marinade 2 tablespoons soy sauce 1 teaspoon dark soy 2 cloves garlic chopped 1 tablespoon five-spice powder 1 tablespoon brown sugar Special equipment: Air fryer Instructions 1. Pour boiling water on the pork skin then dry well and refrigerate for 1 hr 2. Roughen/score pork skin with sharp pointed knife. 3. Flip meat side up and make 1cm deep cuts , 1.5 cm apart. 4. Mix marinade ingredients in a bowl and rub into the deep cuts. Ensure not to contaminate the dry skin. 5. Place on rack and allow to marinate in fridge for minimum 4 hours. For best results allow to marinate overnight. 6. Take out pork 1 hr before roasting so it can return to room temperature. 7. Rub sesame oil onto pork skin and cover well with sea salt. Protect meat with aluminium foil. Place in air fryer for 45 mins at 150 C 8. Increase temperature to 200 degrees. Scrape off as much salt from top of skin. 9. Place back into air fryer at 200 degrees for 15 mins. 10. Remove from air fryer and allow to rest for 20 mins before chopping and serving. Serve with fine rice vermicelli, Vietnamese herbs and lettuce cups for the ultimate authentic experience! Dont forget the nuoc mam cham sauce

Growing up in Australia, I had the opportunity to observe, draw inspiration and study modern cooking techniques off some of the most talented chefs in Australia . Ingredients: 3 small squid tubes thinly sliced 300ml olive oil 2 cloves of garlic Pinch of sea salt Cracked black pepper Instructions: 1. In a small pot heat up 250-300ml of olive oil to 155 degrees with a clove of garlic 2. Poach squid at 155-160 degrees for 90 seconds seconds or until no longer translucent 3.
