04.01.2022 Good mood food... its a thing! Sometimes when we feel stressed, down or hangry we reach for comfort food to make us feel better... like biscuits, cake or ice cream. Problem is these foods cause a sugar spike followed by a crash which actually contributes to a low mood, anxiety and depression. Our body and brain need clean, wholesome, real food so instead of grabbing something unhealthy try one of these good mood foods: berries bananas dark chocolate ... oats yoghurt nuts & seeds coffee beans & lentils As part of Mens Health Week we want to share a yummy recipe. Dark Choc Blueberry Banana Oat Muffins (as pictured) have good mood food key ingredients and taste amazing: INGREDIENTS 2 eggs 1/2 cup plain Greek yoghurt 2 ripe bananas - mashed 6 tblsp maple/rice syrup 2 teasp vanilla extract 3/4 cup quick oats 1 teasp ground cinnamon 1 teasp baking powder 1/2 teasp baking soda 1 1/4 cup white whole wheat flour 1 cup blueberries (fresh or frozen) 1/2 cup dark choc chunks METHOD Preheat oven to 180 degrees Celsius. Grease/line muffin pan. Lightly beat eggs, whisk in yoghurt, bananas, syrup & vanilla until smooth. Stir in oats, cinnamon, baking powder & baking soda until combined and then add flour. Fold in berries & chocolate. Divide batter among muffin cups and sprinkle with cinnamon. Bake for approx 20mins. Allow to cool for 5 mins then transfer to a wire rack. Good to freeze ENJOY!
