23.01.2022 Sunday we polished and ran a cleaning cycle on the still. Nice slow heat and steam. Now to go over the still and recheck water connections and v clamps before next run. Waiting for our ethanol to make the hand sanitizer then we'll start making some spirit.... Happy days

22.01.2022 Stills come in all different sizes and configurations. Electric, gas fire, steam or oil jacket heating. Choice for a distiller is open to express and explore flavour profiles. Our column is unique as we are looking for a smoother product due to more copper contact, length for a lighter/ fruiter product and being gas fired more caramel and toffee notes. With the air gaps between each tube we will also get seasonal effect due to reflux. 14.01.2022 Plumbed in the condensor today and timed the flow rate at full. Based on 1hour we should go through 25,000 litres in a 12 hr period. Lucky we have two tanks plumbed in off the shed. The best part...... no leaks today.

12.01.2022 Safety first As we are gas fired we have put in some serious safety steps and fully certified. 1. Room monitor for C02 and Ethanol vapors 2. A complex safety intergrated gas system. We exhaust the air mixture under the still and after a period of time the gas relay releases and we can ignite the burners. If the fan goes off the pilot shuts off. Over temp system overlays, where if boiler reachs set primary temp gas burner will drop out and re ignite once below set temp. If tem...p hits upper limit, total system drops out completely until you check and reset after cooling. 3. Personal ethanol C02 monitor worn during operation to alert of any build up in area you are working. Thanks to everyone who has supported us on our journey and being patient as we jump each hurdle. 12.01.2022 Adult Puzzles Still extraction going in. Safety first... fan goes on takes gases out, timmer releases gas pilot valve so burners can start. No fan no gas flow. Thank Rob from Foresr Edge Resturant in Gembrook for helping us out with this system.

11.01.2022 Here we go! Permit secured to manufacture onsite and today our liquor license has been granted. Move the sanitiser remaining and we'll get kicking i to making gin and whiskey
