17.01.2022 Not so Fishy fish patties A tale of one source of protein and a handful of hidden vegetables. This is a really nice simple recipe for introducing some soft fish patties with lots of flavour. And one that rest of the family might even enjoy. Ingredients ... Serves: 4 2 large potatoes, peeled and halved 500g white fish fillets 1 tablespoon butter 1 tablespoon grated onion 1 bunch chopped fresh parsley 1 bunch chopped fresh coriander 1 grated carrot 1/2 grated zucchini 1tsp grated ginger 1/2 tsp salt and pepper A small pinch of chilli powder 1 half of lime 1 tsp minced garlic 1 egg 1 cup flour and panko crumbs to fry 3 tablespoons oil for frying Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender. Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl. Add butter, onion, parsley, coriander, lime, salt/pepper, minced garlic, vegetables, chilli and egg to the bowl; mash the mixture together. Shape the mixture into patties and dust with flour and panko crumbs. Heat oil in a large frypan over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving. Serve with basmati rice and tomatoe and cucumber salad #recipes #food #babyfood #fish
