Soda doesnt like to work hard, or smart. Her days usually involve a couch, bed, blankets and sun. Although she is known to catch the zooms and has a deep appreciation for the chooks. 23.01.2022 Fresh Strawberry Cake INGREDIENTS 1-1/2 cups all-purpose flour, spooned into measuring cup and leveled-off 1-1/2 teaspoons baking powder... 1/2 teaspoon salt 6 tablespoons unsalted butter, softened, plus more for greasing the pan 1 cup plus 2 tablespoons sugar, divided 1 large egg 1 teaspoon vanilla extract 1/2 cup milk (low fat is fine) About 400g strawberries, hulled and halved METHOD Preheat the oven to 180 deg and butter a 9-inch deep dish In a bowl whisk together the flour, baking powder and salt. Set aside. Beat the butter and 1 cup of the sugar until pale and fluffy. Add the egg and vanilla and beat on low speed until well combined. Gradually add the flour mixture, alternating with the milk, and beat on low speed until smooth. The batter should be thick! Transfer the batter to the prepared pan and smooth with a spatula. Place strawberries cut side down, so they completely cover the batter. Sprinkle the remaining 2 tablespoons of sugar over the strawberries. Bake for ten minutes, then reduce the heat to 160 deg and bake for about an hour until the cake is lightly golden and a tester comes out clean. Leave the to cake cool in the pan on a rack. Best served with whipped cream or vanilla ice cream! 23.01.2022 As we are all painfully aware, there is a significant shortfall in labour due to Coronavirus restrictions. Our amazing team has been working long hours every day to try to keep our fruit in the stores, but we can't quite keep up. We were thrilled when the Mabel Force Cadets from Mabel Park State High School reached out and offered their time to assist us with harvesting last weekend. One of Eastern Colour's fastest pickers showed the Cadets the technique of picking and handl...ing the fruit, which they learnt very quickly. They spent their Saturday helping to pick our ground crops, and the Sunday in our raised strawberry blocks. Every single tray these Cadets picked is a tray of strawberries that we would not have been able to pick without them, and they were incredibly generous with their time to come spend the weekend with us. It is so wonderful to see young people who are not only willing but happy to spend their weekend working hard in the field. We are extremely grateful to the Cadets that volunteered their time to help us here on our Strawberry Farm - we can't say thank you enough!

17.01.2022 2020 strikes again! As you have all seen over the last few months in various regions across Queensland, the shortage of available workers is impacting the fruit and vegetable industry in a significant way! Unfortunately we are no different, and our team has made the tough decision to stop picking some blocks of strawberries in order to ensure that we can maintain our usual high quality of fruit we pick, pack and send. But it is not all bad news. In order to try to minimise ...the amount of fruit lost, we have decided to open our farm to the public, for people to come in and Pick Your Own strawberries straight from the plant for a mere $5 per kg! Open times are Monday-Friday between 2pm and 4pm. Bookings are essential (just message us and let us know you are coming) and we thank you for your support. Bring on 2021!!!

17.01.2022 Warm Strawberry Salad with Grains, Greens & Beetroot INGREDIENTS cup Burghul (cracked wheat)* cup Pearl Barley*... 1 Can of Black Beans, drained* 1 Can of Lentils or Chick Peas, drained and rinsed* Red Onion, thinly sliced 250 g Eastern Colour Strawberries, quartered cup Slivered Almonds, lightly toasted cup Pine Nuts, lightly toasted 2 tbsp Pumpkin Seeds, lightly toasted 4 Cooked Baby Beets, diced 1 cup Rocket Leaves 1 Bunch of Tuscan Kale, finely shredded 1 Cooked BBQ Chicken, shredded Pomegranate arils DRESSING 2 tbsp Honey 3 tbsp Lemon Juice cup Extra Virgin Olive Oil Sprinkle of Salt Flakes METHOD 1. Cook burghul and barley separately in boiling water until al dente, see packet recommendations for times. Drain and set aside to cool a little. 2. Place all remaining salad ingredients in a large bowl and toss to combine. 3. Whisk the dressing, pour over the salad and toss gently again to combine. 4. Serve warm or cold with crusty sourdough bread. Bring your salad into the next level with this delicious blend of succulent strawberries, warm shredded chicken and grains. 15.01.2022 New Season Strawberries STANTHORPE SEASON! WE NEED 20 WORKERS FOR START ASAP Very large fruit and smaller plants makes picking very easy this time of year. Table picking jobs also available.... Employment direct with the farm. No Labour Hire Company! Very long season starting in late September and going all the way through until June 2021! Eligible for 2nd & 3rd Visa with payslips and super 9.5% Bonus system in place for extra rewards! Picking is piece rate from $0.75 to $3 per kilogram. Packing is piece rate from $0.16 to $0.25 per punnet. The farm will make sure that 50% of workers will get above hourly rate. Regular work 5-6 days per week from late September. 12.01.2022 YAY....Its Friday and the sun is shining. Sip this GST and watch the work week wind down and your worries slide away. The G.S.T Cocktail :... 30 ml of your favourite Gin 23 Queensland Strawberries, hulled and sliced Squeeze of Fresh Lime Cracked Ice Tonic water 2 tbsp Strawberry Syrup Torn Basil Leaves to garnish : 1. Pour a measure of your favourite gin over ice, a squeeze of lime, some shredded basil leaves & chopped fresh strawberries, strawberry syrup to taste. 2. Top with tonic, stir and serve. : Enjoy responsibly of course!

12.01.2022 Strawberry Roll-ups : 3 cups of fresh fruit or defrosted frozen fruit 2-4 TBS raw honey... 1 TBS lemon or lime juice Water as need : 1. Cut up fruit, then add the fruit, honey, lemon juice, and water (if needed) to your pan. Cover with a lid. Cook on low until the fruit is released in juices and combined together. Let it cook down until thickened. 2. Allow the fruit to cool. 3. Add the cooked fruit to your food processor and blend until very smooth. 4. Turn the oven on low (140 deg). 5. Spread a thick layer of puree onto a baking tray lined with baking paper. Using a spatula to get a nice even surface (important, so it dries evenly!) 6. Dehydrate for 3-6 hours depending on thickness. Sometimes one section will dry faster, so turn the tray occasionally to help keep the drying even. 7. You will know it is done when it is tacky, but not sticky. The fruit rollups should not be hard. Peel back the edges and if it does not stick, it is probably done. Some fruits turn out more chewy than others. Just experiment to find your favourite combination. 8. Carefully peel fruit leather off the sheet and cut into strips. Roll in baking paper strips (like the roll ups come so they dont stick to each other) Enjoy your chewy fruit rollups!

09.01.2022 How good does this sound now the days are warming up! INGREDIENTS... 2 cups water 1/4 cup honey (liquid honey is best) or other vegan substitute juice of 7 lemons (each lemon produces about 2 tablespoons of juice) 4 cups fresh strawberries, chopped 1-2 cups ice (optional) 3-4 cups sparkling water (less if using ice) lemon slices, fresh strawberries for garnish (optional) METHOD * Add the water, honey, lemon juice, strawberries and ice (if using) to the blender. * Blend on high speed until frothy and smooth. * Strain the mixture to remove the seeds and add the mixture to a large jug. * Add the sparkling water and stir well to combine (add only 1-2 cups of sparkling water if you've added ice to the lemonade mixture). Serve in pretty glasses with a lemon slice on the rim and fresh strawberries, and additional ice if desired. NOTES...if you want to get a little fancy, * Rim the glasses with sugar if desired, by dipping the rims of the empty glasses in some water and then 1-2 tablespoons of sugar. Fill the glasses with the lemonade after they've been rimmed with the sugar.

03.01.2022 Well it is that time of year again... Changing out the strawberry plants! We start by pulling out all the old plants and bags, throwing them into the tractor trailers and taking them to the compost pile. Next we place the new bags of coir in the hydro stands, hydrate them, and then the planting crew comes along and plants the new strawberry runners. Within 13 weeks there will be little flowers blossoming all over the plants.

01.01.2022 The Family Behind the Farm... The Baronios have been farming their land in Applethorpe for 48 years. With their parents immigrating to Australia from Italy, Eastern Colour was began by Antonio Giovanni Baronio and Louisa Baronio. They have grown everything over the years!!! But mainly focussing on Broccoli, Capsicum, Stonefruit, Apples and Strawberries. They now put all their knowledge and energy into producing oh-so-delicious apples and strawberries.... Antonio and Louisas sons, Nathan and Stephen, have now taken over the reins and run the day to day of the Eastern Colour farm! They are passionate about finding ways to reduce their imprint. They use techniques such as Integrated Pest Management to minimise need for pesticides and other inputs. They grow their strawberries in Coconut Husk which allows for less water, fertiliser + inputs + ensures the berries have the amazing taste you all love! In their very limited spare time, Stephen and Nathan share the love of sports. Whilst Stephen supports sporting legends such as Liverpool (won EPL) + Philadelphia 76ers (NBA favourite!), Nathan prefers to lend his support to less lustrous teams - Orlando Magic (only JUST made the playoffs) + the Broncos (need we say any more?).
