I visited Danielle to interview her and cook with her for my TV series. She was such a delight to work with. I loved her approach to cooking and I am sure you will, too. Thanks, Danielle, for the recipe, and keep inspiring millions of people. 5 carrots (about 500 g) 2 tablespoons coconut oil 6 garlic cloves, finely chopped 600 g chicken breast or thigh fillets, thinly sliced on the diagonal 450 g broccolini, chopped into 5 cm lengths 4 tablespoons tamari or coconut aminos 2 eggs To serve Thai basil leaves sliced spring onion black and white sesame seeds lime wedges To make the carrot noodles, use the wide ribbon blade on a vegetable spiraliser. Alternatively, place the carrots on a chopping board and, using a vegetable peeler, peel into thin, wide ribbons. (Save the leftover trimmings for broths or soups.) Melt the oil in a wok or deep frying pan over medium heat. Add the garlic and chicken and stir-fry for 2 minutes until the chicken changes colour. Add the broccolini and tamari or coconut aminos to the pan and cook for 5 minutes until the broccolini is softened. Add the carrot noodles and stir-fry for another 3 minutes. Push the stir-fry aside in the pan. Crack in the eggs, stir vigorously to scramble them and cook for 2 minutes until set. Mix everything together and serve immediately with the basil leaves, spring onion and sesame seeds scattered over the top and the lime wedges on the side.
