24.01.2022 Ratatouille with baked sweet potato You will need: * 1 Tablespoon olive oil or coconut oil * 2 Brown onions chopped * 2 Red capsicums chopped ... * 6 anchovy fillets * 1 eggplant chopped * 2 x 400g tin diced tomatoes * 3 Zucchini chopped * 12 Kalamata olives sliced in half * Handful of basil Serves 4-6 In a saucepan sauté onions and capsicum for 2-3 minutes until tender add anchovies in and mix. Add eggplant, diced tomatoes and allow to simmer covered for 20 minutes, stirring occasionally. Then add zucchini and some water if needed allow to simmer for 10-15 minutes or until zucchini is cooked through. Just before serving add basil and olives. Serve with baked sweet potatoes and a sprinkling of cheese. Yummy! Eat healthy & Live long!
