25.01.2022 We have been getting lots of questions about the Negroni, so we thought we would clear them all up and tell you our Negroni secrets. Ingredients -30ml London Dry Gin (We love Tanqueray) -30ml Campari ... -30ml Sweet vermouth (We use Cinzano 1757 Rosso) Pour all of these into your glass (or mixing tin if you're making more than one), Add lots of ice and stir! Remember, you are just stirring to mix your ingredients, NOT to dilute. Cut your orange peel and squeeze the oils over your drink, rub it around the rim and then twist into your glass. And Voila - You have the perfect Negroni. If you find this a bit too bitter, you could use more of the Sweet Vermouth or use an Orange wedge rather than a peel. See more

We asked him a few questions so you could get to know him better!... Where are you from? Im from a bustling City called Galway in the west of Ireland but I lived in London for about 9 years and Ive been here in Melbourne for coming on 3 years now. How long have you worked at 18o6? Ive worked at 18o6 for over 2 years, it was a bar I knew about before coming to the country and was very keen to get involved with. Whats your favourite cocktail? Its got to be a Gibson Martini. Theres no competition. Morning, Noon or Night, theres is never a bad time for a Gibson. What do you get up to when youre not at work? Ive been playing the guitar for about 19 years now, so I like to have a Jam at home. I also like cooking nice meals and eating all the cheese me and my Mrs can consume.

05.01.2022 Did you know that Punch is considered to be the earliest cocktail? The story goes Punch began in the British East India trade when a boat of English Sailors ran out of Beer and Wine and concocted the idea to reverse-distil a spirit back to a version of wine. They picked up some Coconut Arrack in India and added water and lemon juice in an effort to bring it to the similar strength of wine. On one occasion, they returned to England with some leftover and it was be shared with ...the men at the docks. The voyage investors caught onto this and from then on would meet the ships upon docking and sit around and enjoy this communal drink with other people of the same stature. The popularity of the drink skyrocketed and demand for importation of ingredients was high, unfortunately the cost of ingredients for one punch bowl at this time (around the 1690s) was half of a weeks living wage and therefor became an accessory for the rich to show off.
