22.01.2022 Happy International Women's Day! It’s a good day to introduce the women of El Parche! First up, Nicki and Eva. Nicki is our co-founder and Communications Manager and Eva.. is well baby Eva, the boss. We also have the fabulous Maria, who is our Marketing and Social Media Manager.... We understand how important it is support women in workplaces and as a coffee company with Colombian roots we know how difficult it can be for women to become coffee farmers and producers back in Colombia, in this male dominated industry. Our Women in Coffee range is our way of highlighting these brilliant women and is something we will continue to do, all throughout the year because they deserve the spotlight. At the moment we are honouring Camila Gomez, who took over her mother’s farm. A family of women in coffee pushing the boundaries of speciality coffee, now that’s something worth celebrating!

07.01.2022 Let's talk about coffee. As we mentioned in a previous post, there are 3 common ways to process coffee: honey, washed and natural. Which is your favourite? Today we will talk about the natural process.... The natural process is a method which the coffee cherries are passed through tanks of water and the fruits that sink to the bottom are deemed perfect and therefore chosen to continue the process. Without removing any part of the fruit, the cherries are immediately taken to patios or green houses where the drying process begins. In comparison to the honey process we covered last time where parts of the fruit are removed before drying begins, this is one of the ways they differ. The natural process is quite labour intensive as it's necessary to turn and rake the drying coffee in order to eliminate the chances of rotting and excessive fermentation. If this isn't done there is a risk of getting unpleasant flavours and aromas or so-called cup defects. This natural process ensures that the fruit is dehydrated through drying and then the sugars in the fruit are concentrated allowing the beans to draw in all the flavours of the fruit, mucilage and parchment layers. This is what makes natural coffees more fruity and fuller-bodied. Over the next couple of days we will be launching or first natural coffee from Colombia from our friends @rawmaterial.coffee . It’s fruity, has great body and notes of peach, apricot blueberry and chocolate. Keep an eye out for the launch and try this awesome coffee for yourself.

With notes of peach, apricot, blueberry and chocolate this is one you don’t want to miss. It’s fruity, full of flavour and has great body. ... A natural processed bean, brought to life with the support of @rawmaterial.coffee who are doing great work with farmers in Colombia. Villamaria is a coffee drying station that 30 coffee producers in the surrounding region come to to process their coffee. Climate change has meant longer rainy seasons making it challenging for farmers to dry their coffee, an important part of getting the beans ready for us. Due to the challenges of drying, Villamaria was born. Here farmers in the region can access equipment they need to produce high quality coffee which is great for them and for you! Try it and experience the quality for yourself
