24.01.2022 IT'S INTERNATIONAL MERLOT DAY Merlot is the most popular and widely planted wine grape varietal in France, reaching its true zenith of expression in Bordeaux wine. Merlot has also been used to make stunning wines in Tuscany and to a much lesser degree in Switzerland, Australia, Argentina, USA and numerous other countries. Merlot continues to gain in popularity as a grape for wine. In 1990, Merlot was the 7th most popular grape. By 2010, Merlot jumped to second place as the world’s most widely planted grape. Only Cabernet Sauvignon has more vines planted. In character, Merlot offers flavors of chocolate, plums, licorice, black cherries, blueberries, black raspberries and blackberries as well as jam, which depends on the levels of ripeness the fruit was allowed to achieve. It is round, fleshy and can be opulent in texture.

18.01.2022 Vacherin Mont d'Or and Vacherin du Haut Doubs are essentially the same cheese, but the first is made with pasteurised milk on the Swiss side of the Jura mountains and the second with unpasteurised milk on the French side. They have a soft, pale brown rind, with deep, wave-like indentations and a yielding texture. They are packed in a circular spruce box, which both, flavours the cheese and keeps it in shape (it can be very runny when ripe). The flavour is rich, a little sweet, with grassy undertones. Vacherin d'Abondance and Vacherin des Bauges are two other French vacherin cheeses, and are similarly soft and slightly sweet.
