17.01.2022 F45KV EATS: RECIPE: 2 x large eggs... 2 x slices of seeded sourdough bread 100g of multi passata 1 tsp of mixed herbs 1/4 of a red capsicum 1/4 green capsicum 1 bunch of bok choy 1/4 of a zuccini 1/2 a red onion 1 tsp of greek yoghurt and a handful of spinach to top. METHOD: Pan fry the onion and capsicums until brown, throw in zuccini and bok choy and cook for 1-2 minutes. Next add the passata and mixed herbs and cook for a few minutes. Finally add the eggs and pop a lid on the top of your pan, cook for 3-4 minutes or until eggs are cooked to your liking (I like mine soft). Top with the yoghurt and spinach, ENJOY!
