23.01.2022 CITRUS Citrus has to be one of the most under rated things to cook with! The tart, tangy, sour flavour really shines when you bake it in muffins and cakes. ... My mother inlaw gave me some beautiful oranges recently and I wanted to do something "special" with them rather then just eating them! Ive now made 3 batches of oranges and poppy seed muffins (which seems to be a real hit with my family and friends) Today, I checked the fridge for inspiration and found we had some greek youghurt that needed using. Instead of throwing it away, I remembered I have an amazing recipe for Lemon muffins. I didnt have eggs so I did what I usually do and made up a recipe. I chucked some things in a bowl and out came the most beautiful, soft and fluffy lemon muffins. My house now smells amazing and what makes it even better is because my freezer is already full of my baking, I get to shared them with my lovely neighbours and friends! This is what I love about baking..... I love sharing my passion with you all and sharing my food with others! It warms my heart. Happy baking



20.01.2022 Once again, the air fryer didnt disappoint! A massive whole chicken, rubbed with oil and seasonal all spice then popped breast side down for 45 mins then turned over for another 40-45mins. Perfectly cooked - juicy and delicious!! The weekend is almost over.... wishing you a fantastic week ahead and happy baking

18.01.2022 Whats for dinner tonight?? We had creamy mexican chicken... it was sooo yummy! I popped 5x chicken breast (4 would be plenty) 1 packet of taco seasoning and 1.5 blocks of cream cheese in slow cooker for 4 hours on low. About half way through I turned the breasts over and mixed sauce together to get rid of clumps of cream cheese. I then put a tea towel under the lid because it was going too watery (from condensation) when it was done, i pulled chicken breasts out and shredde...d these. I then added about 150ml cream and mixed sauce together with a wisk. Added the chicken back in and cooked for a few more mins. I served it with brown rice and broccoli and it was demolished within minutes! Will definitely be making this one again

14.01.2022 One of the reasons I love baking/cooking is because you get to be creative and when your idea works.... its amazing!! We have a pretty chilled weekend at home this weekend and although I miss the hustle and bustle, its nice to just stop and enjoy the little things. Today, whilst grocery shopping I let the creative juices flow and I thought about doing a soup in the slow cooker. ... Im over pumpkin soup and wanted something with more "comfort"..... Cauliflower and leek soup!!! In my slow cooker I popped: - 1 whole cauliflower - 1 leek chopped - 2x potatos, diced - 4x rashes of shortcut bacon, cut 1cm - veggie and chicken stock - touch of curry powder Put on low for approx 5 hours and blitzed once done. Then added a tin of evaporated milk and a touch of cheese! When its time to serve, i will add some crucnhy bacon pieces on top for some texture and some salty goodness! I can't wait to dig into this one!!

14.01.2022 Mid week dinner.... homemade mac and cheese with garlic bread. Yummo!! All 6 kids smashed it and there are plenty of leftovers (apparently I cook too much food ) Happy hump day everyone

13.01.2022 Chicken, pumpkin and chorizo risotto... so good even the kids went back for seconds! Ingredients: - 1x spanish onion - 2x chorizo sausages... - 1x chicken breast - As much pumpkin as you want, chopped into chunks approx 1cm to 1.5 cm - aborio rice - chicken stock - spinach and rocket leaves - a little cream and cheese to finish off if preferred Steps: - fry off onion till clear, add chirzo and fry till some colour. Add pumpkin and chicken and cook till chicken turns white (but not fully cooked through) - at this point you can pop lid on to help steam pumpkin but usally no lids are required - add around 1.5 cups of aborio rice and "dry" fry until all mixed together and rice goes sort if see through looking (a few mins) - add warm chicken stock a little at a time. A few ladles is all you need. Then cook off most of the liquid before you add more. - keep adding chicken stock (i did a full kettle full of water plus cubes then added some water) until rice starts to thicken and goes soft - once rice is cooked, add leaves and also choped parsley (if preferred) - this is also when you add some cream and cheese if you want it The final consistency is a thick, creamy mixture, not gluggy! Salt and pepper to taste and enjoy!!!!

12.01.2022 I did this beauty again today. Being a short day (finished at 3pm) I did the school pickup and came home to a beautiful smell in the air of creamy mexican chicken! It is so simple and so tasty. Even Master C ate it with hardly any complaints 3x chicken breast, 2x taco seasonings, 2x blocks of cream cheese and a tin of evaporated milk and 5 hours later and dinner is done. This made enough for 3x dinners plus 5 lunches!!! Winning!!! ... Served with brown rice and steamed broccoli...yummo!!!



11.01.2022 School lunches are done! Being organised creates a relaxed morning. No running around, looking for something to "chuck in their lunchbox". Having things on hand in the freezer makes a healthy lunchbox possible! Its so nice to sit down at the end of the day, knowing that your organised for the day ahead!

09.01.2022 Gotta love a classic.... hambugers!!! We usually have a chilled Friday/Saturday night dinner as its our chance to just relax and hang out with the kids ! Tonight on our menu was hamburgers! We chose our own fillings with no stress and no pressure! ... Take time to enjoy the little things, Pick your battles and just relax....its the weekend

07.01.2022 Another sunday roast done and done! This one was roast chicken with chinese 5 spice, oil, salt and garlic powder. Popped in the air fryer breast side down for 30 mins at 180, then turned over for 40 mins at 180. ... Veggies have oil, salt and mixed herbs. Put in the air fryer when the chicken was turned. (40 mins at 180)

06.01.2022 Slow cooker Sunday Today I wanted to try something different.... my kids love risotto. I love the slow cooker. So i combined the two and did slow cooker risotto! It worked quite well but you do still need to add liquid as you go. ... This one has chorizo, onion and pumpkin. I will added spinach and kale just before I serve it... yum!!! In the other SC, we have more mexican pulled chicken for work lunches (added to wraps with salad) its honestly delicious

05.01.2022 This morning I got to put my birthday present to good use. I made banana muffins!! This recipe is one I just chuck things in (theres no recipe as such) but it works!... The stand mixer made it so much easier. No mashing bananas first or adding wet and then dry ingredients - I just popped everything in at once and mixed for 1-2 minutes and done! Baked until golden brown and voila.... banana muffins! Happy baking

04.01.2022 Friday night dinner...... made easy! Fish tacos!!! Any fish you like, a bag of asian salad mix and some soft tacos and we have a quick, yummy and easy dinner to finish the working week! ... Happy Friday

03.01.2022 I love when my freezer is empty. It means..... I GET TO BAKE!!! On today's menu we have: - cheese and bacon rolls - ham and cheese toasted wraps... - banana, oat and LSA muffins - double choc brownies with walnuts In the slow cooker I have the filling of chunky steak pies. (Steak, mince, beef stock, Worcestershire sauce, curry powder, bbq sauce and gravy) Happy Saturday and Happy baking

03.01.2022 Meatball subs! Its cold and wet here today (mostly) and whilst doing my groceries shop I found some yummy meatballs on special. I didn't want to have pasta (again!) So I thought outside the box! I grabbed some crusty bread rolls, pasta sauce (see photo) and already had cheese at home. ... I cooked them up, put the meatballs and sauce in the rolls and topped with grated cheese. Baked in oven until the cheese is golden. They were a bit with the kiddos (big and small)

01.01.2022 Baked sausages!!!! To be honest, I've never thought of it however tonight we had a veggie bake and I thought what the hell, the oven is on anyway, I might as well try it! I popped them on a tray spaced apart, chucked them in the oven and turned once and voila! They didnt take very long at all :)
