20.01.2022 We've found a new place to buy fish which is so fresh and delicious. My kids love white flesh . I usually grill it with herbs and lemon or batter it. Last night I came up with a new crumbed recipe- apologies for my quantities they are as usual a handful of this and a splash of that. Makes enough crumb mixture for 4 - 5 pieces of fish ... Preheat oven to 180.c Place around 150gms of flour in a bowl and set aside. (I used GF plain flour) Whisk 2 eggs in another bowl and set aside Blitz 4 pieces of GF bread or regular bread slices, a handful of good quality parmesan and a handful of parsley, a good pinch of salt and pepper. (1 lemon rind optional) Roll 1 piece of fish in the flour first, (so the egg has something to hang on to) then in the egg - just enough to coat- you may need to scrape down with your fingers, don't have it dripping off or the crumbs will get too wet; then press into the crumbs. Repeat with remaining pieces. Place in the fridge for 30 mins to set. Shallow fry in rice bran oil until just golden each side- then place in preheated oven and cook for 10-15 mins or until cooked through. Serve with salad and homemade mayo

19.01.2022 Too easy pumpkin dip. I have a habit of picking, so I like to have healthy snacks on hand. This is my healthy pumpkin dip. Roast 1 kg pumpkin with skin on with 1 tbsp olive oil, 2 cloves garlic, 1 onion, a sprinkle of turmeric and cumin. Slice 1 chilli (optional) and mix all together. Roast at 180c fan forced for around 45 mins or until cooked. ... Allow to cool slightly, blitz with a kitchen whizz or blender Divide into containers. Top with fresh chives or coriander. Eat with rice crackers or carrot and celery sticks. This is yummy and low in calories/ total cal is around 480- divide in 3-4 containers for an easy snack at work at only 120 cal per serve (excluding what you choose to dip with) A no preservative, wholefood healthy snack. I like my dip chunky, if you like smooth, add a quarter tin of coconut cream before blending. Mix it up- add cashews and feta before blitzing or use sweet potato instead.

Crispy skin salmon on a bed of roasted pumpkin and rocket with some home made lemon and dill Mayo. Photo 2. Tapioca coated prawns on a bed of rocket, mango and avocado (salad idea credit to Tricia Howard) ... Perfect grain free and gluten free options that are filling, full of good fats and delicious!

10.01.2022 Cleaning out the fridge to use up Nonna's organic greens- a mix of spring onion, spinach, iceberg lettuce and snake beans sautéed with garlic, chilli, ginger, oyster sauce and sesame oil. Will top with an egg and some rice for a quick, healthy, organic and gluten free mid week meal- minus the chilli for the kids

08.01.2022 They worked (recipe in previous post). The recipe is good- I've made these too thick so next time I'll pour less batter/ but so quick and easy- minimal ingredient gluten free and egg free wraps- I used cumin and paprika for the spice. Possibilities are endless- lunch wrap, burritos, soft tacos, naan bread. I used tapioca flour (arrowroot) available at the supermarket in the baking section. They taste good too.



08.01.2022 I realised tonight I've never made baked potatoes with toppings for the kids! Tonight's options ham or bacon Shredded cheddar cheese, butter, sour cream beetroot, pineapple and chives. Went down a treat!... I boiled the potatoes, skin on for 20 mins, pricked with a fork and then wrapped in alfoil and baked in oven for 1 hour at 180c. I used what we had on hand but for a healthier option you can use sweet potato, chicken, smoked salmon or beans and natural yoghurt.

06.01.2022 Lettuce cups are a great way to cut down on your bread intake if you need. Mix a tin of tuna with half an avocado, a tsp of capers and a dollop of mayo. Place into lettuce leaves and enjoy.

03.01.2022 My kids love meatballs! I like to expose them to different flavours/ cuisines. Sometimes it's as easy as adding 1 new flavour to your meal. For these delicious Thai meatballs I added 1 tbsp of Thai red curry paste to 500gms minced meat along with salt and pepper. ... Roll in small balls coating lightly in cornflour - you can do this by adding a little cornflour to your hands when rolling rather than adding another step Fry in a non stick pan until just brown Transfer to an Oven dish and coat with a sprinkle of sesame seeds and s drizzle of honey Bake at 180. for around 10 mins or until cooked through My kids had theirs with rice because they weren't keen on the veggies I had left in the fridge- we had ours with pictured veg- eggplant, mushrooms, capsicum and spring onion- all veggies cut and stir fried in a little fish sauce and sesame oil. Simple, yummy and healthy

01.01.2022 So here's something new! Thought this would make you laugh- I was up at the crack of dawn to make our newest members puppy food! Our little fur baby- 'Alfie' also has a grain free grass fed protein diet with rice and good fats from flaxseed oil. Nothing but the best for our little Alfie! don't worry I won't start posting puppy recipes now - unless somebody would like it? This recipe has been rightfully named the Alfie Pattie! Freezer stocked- for the next 2 weeks at least!
