21.01.2022 A cook up in Sunshine Beach on the #hibachitabo. The revelation was the daikon and turnip. A smear of olive oil and a touch of seasoning. Extraordinary!!!! Lots of other vegetables but always love some cabbage. Centimetre thick fillet seared briefly with some salt and then a squeeze of lemon. Keeping it simple really works. 16.01.2022 A boardroom table in Brisbane of Victorian Ash. 4.2 meters long 1.2 meters wide and 70mm thick on two 120 by 70mm legs. Hollow to take cabling. Walls are Vic Ash shiplap and the ceiling using the @austratus system from @modinexgroup. Biggest table I have made but happy with the result. 16.01.2022 Introducing the all new Hibachi Tabo Commercial. 820mm long with a grill area of 720mm by 160mm. Grill is of 8mm glass bead blasted stainless steel that can be removed for Yakitori. Made from laser cut 2mm 304 stainless steel with removable legs. 12 25mm thick ceramic bricks. 2mm ceramic insulation between the ceramic bricks and stainless making a very efficient for charcoal use into the ultimate in efficiency. A removable steel turbo grate to bring the air in for higher temperatures and to reduce choking of charcoal after a long service. It’s a 2.7 meters long magazine table laminated from kauri pine recovered from Yalangur Station north of Noosa. 07.01.2022 James @semajorr was telling of one of his first cooks on his new #hibachitabo system. We were discussing how hard it is to be prescriptive in how to as there are so many variables. This is James’ method. I wanted to see how Low and Slow I could go. So after trying the Hibachi the other night with a roast Lamb butt, someone mentioned smoking and longer cooking times at lower temps. Thought I’d give it a go with this beautiful 735gm Rib Steak. Was 60mm thick. So I se...asoned it with Thyme, salt and pepper & a drizzle of oil. Once the grill came up to 110c I added some presoaked pecan chips(about a cup full/ half of what’s in the dish) it dropped back to 96c and I put the meat on. An hour and a half later it came off and went into the griddle pan for 2 minutes a side. Then rested in foil until the veggies were roasted and served. Turned out beautifully. I’m only new to this, but loving the experience. This binchotan charcoal is awesome. To keep it on average of 112c I only used 12 half sticks. 05.01.2022 Drinks trolley - client asked for a drinks trolley as he couldn’t find something that was different. This fully laminated and dowelled piece took some months to finish, but there are no metal fastenings at all even to fix the wheels. Timber is Kauri Pine and the leather is natural and oiled for protection. 04.01.2022 The ultimate charcoal grill now comes in two sizes. So I have done a Hibachi Tabo verses Hibachi Tabo Commercial. The difference between them starts with the size. The grill size for the Hibachi Tabo it’s 470mm and the Commercial is 720mm by 170mm. Timber handles and feet verses stainless steel. They both have 25mm ceramic bricks wrapped in 2mm kitchen grade stainless making them easy to clean and look fantastic. They both have 8mm glass bead blasted stainless steel rod for t...he easy cleaning grill. Then the commercial comes standard with a turbo grate and insulation. Both available in the smaller version. At the moment the Hibachi Tabo has a smoker/oven as an extra which is coming in the next month for the commercial. They both have canvas covers as extras. And do much more. Sitting on 95mm high rails to lift it of the clients concrete slab. Also shown are the interlocking staves and our unique curved rebate so it fits perfectly on the circular base.
