25.01.2022 Ok, I'm on a cheese mission. The first being the Finnish Squeaky Cheese, next is mozzarella. Although this image looks like an amazing tub of ricotta, it is in fact my first cheese fail... an edible fail (and damn good too. Beats vinegar or lemon juice hands down!) but a fail none the less. I was working on a quick mozzarella, which can be done easily in around 30 minutes. The traditional way will take around 5 hours, not that I'm in a hurry, I just thought it would be easier... . The issue with this was I added the citric acid when I had already got the milk to 30c rather than at the very beginning. This meant the curds were rough and small not the beautiful smooth, soft curds that I required. Pushing through my error I still added the rennet and left it to rest, but it didn't save it. Rough, split curds on top and silky smooth curds underneath. The one thing I take away from this fail is that I will ALWAYS make ricotta this way from now on! Once I have perfected mozzarella I will put up my method but until then you will be subjected to my fails and how I use them. The first thing I made with about 300g of the ricotta was my mum's lasagna (recipe coming shortly) Awesome Ricotta Fail Recipe: 3.80 litres of milk 1.5 tsp citric acid dissolved in 1 cup water 1/4 tsp liquid rennet Salt can be added but not necessary Heat milk to 30 then add the citric acid, stir and continue to heat till it reaches 37 then add the rennet. Stir and then leave, with a lid on, for 10 minutes. Give it a choppy stir to break up the larger curds at the bottom and strain through colander or moulds and drain till you are happy with the consistency. Place in fridge for up to two weeks. It's a meal unto it's self and is found in very similar forms all throughout Europe. Every single country has their own version. These's no set amount of ingredients, but you would be having alot more of the feta if you were to be in Bulgaria. 24.01.2022 Today’s lunch, chilli prawns and rice noodles . INGREDIENTS 300 grams peeled prawns, deveined 1 long red chilli, seeds removed and roughy chopped, 3 garlic cloves, peeled,... 1 tsp lemongrass paste, 10 Vietnamese mint leaves, 2 Tbs oyster sauce, 1 tsp fish sauce, 1 tsp sugar, small bunch of basil. METHOD 1) Use a mortar and pestle to make a paste from the garlic, chilli, half the mint leaves and lemongrass paste, 2) Heat oil in a frying pan over high heat. Add your paste and stir-fry for a minute, 3) Add the prawns and stir-fry for 1-2 minutes, 4) Add the oyster sauce, fish sauce and sugar and stir-fry for another 1 minute, your prawns should be opaque, 5) Turn heat off and stir through remaining mint and basil leaves and serve on a bed of rice noodles ENJOY! 22.01.2022 Satay Vegetable Noodle Bowl... One of the simplest satay recipes ever. Four ingredients for your sauce and that's it. Using @ziggysfresh gorgeously fresh produce from their home delivery boxes this meal is prepared and on the table within 30 minutes.... Recipe: 3 tbs peanut butter 3 tbs sweet chilli sauce 200ml coconut milk 1/4 cup water Sweet potato Beans Capsicum 2 eggs Quick cook noodles of your choice Lime cheeks Garnish with sesame seeds, fried onion, corinader leaves and crushed peanuts Heat oven to 180c and place in small cubed sweet potato. Cook for 20 minutes. Place the peanut butter, chilli sauce, coconut milk and water into a saucepan and heat till the peanut butter has been incorporated. Set aside. Bring a pot of water to the boil and put in the eggs. Cook for 7 minutes for straight from fridge eggs, about 6 minutes for room temp. De shell and slice in half. Sliced the capsicum and beans then set aside. Cook noodles as instructed on pack. When ready to eat place the noodles into a bowl, pour in the satay sauce and then top with all the ingredients and scatter over any or all of the garnishes. I love these as they are a great way to use the leftover veggies you have; roasted sweet potato and cauliflower have been used in this one. Make a spicy lamb mince with lots of cumin, coriander and paprika. Season it well.... Sumac and onion add a zingy fresh flavour. Make a mint yoghurt and some hommus (or make it easy on yourself and purchase it) Finally, fresh herbs. Parsley and mint are a must. Capsicum and tomato add more colour and coolness if you love your chillies in either fresh or sauce form. Christmas is only 3 months away!!! . You can use this cookie recipe for any biscuits! . 22.01.2022 Bubble 'n' Squeak... the delicious meal that comes after a spectacular roast dinner. I suppose, in regards to a 'traditional' Bubble 'n' Squeak, this is more along the lines of a frittata, in that I use just egg to bind the chopped up meat and veggies. This is the way mum has always made this classic leftovers dish. The most important part is making sure you have plenty of gravy leftover to drizzle over the top.... If you have a big enough fry pan then you can whip this up in no time. I might be half a world away so will mark the day with Polish ledzie w mietanie, Herrings in sour cream, and a nip of Polish vodka, in memory of those long gone but not forgotten.
20.01.2022 Prawn, Chicken and Bacon Linguine... Such a glorious combination, prawn and bacon - Surf and Turf in a different form. A simple dish to make but if you want up it a little then make some bacon wrapped prawns to place over the top ... soooo good!... Tip is to find a deli or butcher that can slice bacon to your requirement, and for bacon wrapped prawns, the thinner the better. This recipe can be altered to the amount of people you are serving. Aim for a minimum of 3 wrapped prawns per person. 1 chicken thigh per person and any leftover veggies you have from the week can be added. Recipe: Prawns with tails left on Thin sliced bacon BBQ sauce Wrap prawns in a slice of bacon. Place on a baking tray and brush with bbq sauce. Cook in a pre heated 220c oven for 12 minutes. Cook Linguine then drain and set aside. Any remaining bacon, fry up till crispy and set aside. Dice the thighs and brown well then set aside Cut prawns into 3rds and brown in a little oil then set aside. Prepare any veggies you want, here I had mushrooms and broccolini leftovers. Make a quick sauce by pouring a cup of wine and a small can of diced tomatoes (about 100g) into a sauce pan and reduce, add sliced garlic and onion and leave to simmer for 10 minutes. If you are using more tomato then leave to cook for about 20 minutes. Add a tbs of butter and the veggies. If they are leftovers then add the prawns and chicken back into the pan. If not, allow to cook to your liking for a few minutes. Add a dash of cream and season to perfection. Add and handful of chopped basil or parsley, or both, stir and add pasta and toss threw the sauce. 19.01.2022 Pan Fried Gnocchi with Broccoli Sauce... Thanks to @ZiggysFresh home delivered fruit & veg boxes, this super quick and easy dinner will be enjoyed by the entire family. Leftover sauce is delicious on roasted vegetables, making for another quick meal during the week.... Recipe: 1 tbs butter 2 tbs plain flour 2 cups milk 1 head of broccoli 1/2 onion, diced 2 cloves garlic, minced 1/4 cup Parmesan cheese (optional) Pre made potato gnocchi (Grocery Add-On Box) The White Sauce: Melt the butter in a saucepan then add the flour. Whisk on medium heat till foamy then add about half of the milk, whisking till blended then add the rest of the milk. Continue whisking till it comes to a bubble and has thickened. The Flavour: Chop a whole head of broccoli, stem and florets, and place into the white sauce. Leave a couple of small pieces of florets to quickly pan fry in a little oil to scatter on top at the end. Cook the broccoli in the sauce till tender. Pan fry the gnocchi in a little oil till golden and set aside. While the sauce is lightly simmering away, heat some oil in a pan and cook the onion for a couple of minutes then add the garlic, cooking a further minute. Add this to the broccoli sauce. With the pan still hot, add the little florets and fry in a little oil till golden and fragrant. Set aside. Once the broccoli is tender then leave to cool slightly before pureeing using either a stick blender or a food processor till smooth-ish. Chunks are completely fine. Add parmesan cheese if you choose and season well with salt and pepper. Serve by placing the gnocchi into bowls, top with the broccoli sauce, grate some cheese on top, scatter the fried broccoli pieces and a sprinkle of chilli flakes if you like. Realising that I had ricotta in the fridge that needed to be used asap I pulled out a range of ‘near the end of their life’ ingredients and ta da! Spinach and ricotta muffins with tasty cheese and corn. INGREDIENTS 80 g melted butter 200g ricotta... 250 mls milk 300g spinach or kale - shredded (use frozen if you have it) 1/3 cup shredded tasty cheese 1/3 cup corn kernels 350g self-raising flour 1 egg 1 tomato sliced and cut into quarters, Handful of pepitas, Extra shredded tasty cheese to top the muffins with. 19.01.2022 Chinese BBQ Beef Stir Fry w/ Glazed Greens... Bang on with flavour, this dish appeals to the entire family. Recipe:... Thinly slice any type of onion and place in a bowl with 2tbs of white vinegar, 1/2 tsp of sugar and salt then set aside. Cook your rice then add 1 cup of finely chopped spinach or kale while still hot. Set aside. Mix together 1/4 c Kecap manis, 3tbs soy sauce, 1 tsp pepper and 1 tsp chili flakes and set aside. Roughly chop your asian greens and have ready to cook with sauce near the stove. Chinese BBQ Spice: keep leftovers in jar. Dry pan fry 1/4 C cumin seeds and 1 tbs szechuan peppers till fragrant then grind. Add... 2 tbs black pepper 1.5 tsp salt 1 tbs ginger powder 1 tbs garlic powder 1 tsp chilli powder Mix well together and set aside. Finely slice 500g beef rump and place half of the spice blend, 1 tbs oil, salt and pepper and combine well. Cook beef in batches and set aside. Add asian greens and cook for 30 seconds to 1 minute then add the sauce. Now make up your delicious bowls: Place in bowls the green rice, beef, asian greens. I have just learnt that Belgium waffles come in two varieties: Liège waffles and Brussels Waffles. Liège waffles are the sugary, caramelised outside type and the Brussels variety can be rectangle in shape with a standard crispy crust, although the crust is entirely dependant on how far you want to take it. Both have deep holes, which are amazing carriers for the wide va...riety of toppings that can be used. This recipe is a Brussels type - sweet with a crispy crust (because I like to cook it quite long) and super fluffy on the inside. I also like having an irregular edge on my waffles so I only use one ladle of mixture. If I were to use two ladles then the mixture will fill the entire cook plates and I will have perfectly round waffles. Recipe makes about 10 large waffles: 1. Mix together the following ingredients in a large bowl... 480g plain flour (4 cups) 55g sugar (1/4 cup) 20g baking powder (4 tsp) 1/2 tsp salt 2. Seperate 1 egg 3. Whisk the egg white till you get firm peaks 4. Combine... egg yolk 125ml olive oil (1/2 cup) - NOT EVO, be sure it's super mild in flavour 500ml milk (2 cups) 1 tsp vanilla 5. Pour the egg yolk mixture into the dry ingredients and mix well 6. Fold in the egg whites 7. Pre heat your Belgium style waffle maker, do a quick spritz of oil (or brush on) and pour in a ladle or two of mixture. Serve with your preferred toppings. Ice cream, maple syrup, berries and a jam are great. Hot tip: Make the whole batter's worth of waffles as the leftovers reheat incredibly well. This means that you can freeze waffles to have next week. 15.01.2022 Here's a little tip if you like fresh soups brimming with amazing flavours but always find yourself without those essential ingredients... especially good for right now. For years I have been making and storing these flavour parcel bombs in the freezer for when the family wanted an awesome noodle soup or if I was away and hubby needed something simple to make for dinner. Simply put all your asian flavours in a vacuum sealed bag (or freezer bag with air sucked out... grandma s...tyle) such as: Lemongrass, chillies, coriander, spring onion, carrots, ginger and garlic. When a soup need hits you, take the frozen pack out of the freezer and place in a pot of water and leave to simmer away for a while. Throw in a chicken breast, which you can shred and add to your soup. Make some noodles add some soy and you are done! A full flavoured, super easy asian noodle soup. 15.01.2022 Daily bread, yes please, especially when it’s this easy to make! Ok, Turkish bread rolls but so yummy! . Take 530 grams of plain flour, 1 teaspoon of sugar and 1 teaspoon of salt, 7 grams of dried yeast and mix it with 375 mls of warm water. . Combine it into a rough dough with a fork or a knife then knead on a lightly floured kitchen bench. ... . Knead it for 10-15 min until you have a perfectly smooth dough ball. . Pop it into a lightly greased bowl, spray top with olive oil and let it stand for an hour. . I keep mine in an oven, away from any drafts. After the hour take your dough out, it should have risen and doubled. Portion it into rolls of your desired shape / size cover them with a warm cloth and let stand / rise for another 30 min. . Whilst the rolls are rising set oven to 230 and pop some baking trays in to warm them up. . At the end of the 2nd rise pop your rolls onto baking paper, transfer them to the hot trays. Brush with egg yolk and olive oil and sprinkle with sesame seeds. . Bake for 15 min. . 14.01.2022 If there is a one pudding I could eat everyday it would be rice pudding. Mum's pudding, which is quite firm with sweet dots of sultanas strewn throughout is just heaven. So, after seeing Nigella Lawson cooking a Queen of Pudding recently (first time ever hearing about this dessert!) and juicy berries, lemon, eggs and a bag of rice all from Ziggys Fresh Fruit & Veg boxes (jump onto their website https://ziggysfresh.com.au/shop/ to see their selection of boxes available) scream...ing to be used in a scrumptious dessert, a hybrid sweet treat was created. This is an outstandingly delicious dessert, I'm seriously needing to hold myself back . Plus, it's a dessert that keeps giving! You'll have a jar of homemade Strawberry and Blueberry Jam to enjoy on your scones later. RECIPE: Prepare the following first ... 1 1/2 cups of cooked rice (I used Basmati) 1 lemon, zest grated and juiced - zest for custard and juice for jam 3 eggs, separated - yolks for custard and whites for meringue Grease a 12cm x 20cm baking dish then dust with caster sugar Pre heat oven to 170c CUSTARD: 1 cup milk 2 tsp vanilla 40g (1/3 cup) white sugar 3 egg yolks Zest of 1 lemon Pinch of salt Place all ingredients into a bowl and whisk together. Add the cooked rice then pour into prepared dish. Bake for 15 minutes. JAM: Juice of 1 lemon 1 cup white sugar 1 punnet strawberries 1 punnet blueberries Place all ingredients into a saucepan, bring to the boil then reduce to a simmer and cook for 15 minutes. MERINGUE: 3 egg whites 1/4 cup caster sugar Whip egg whites while slowly adding the sugar. Stop when the egg whites are smooth, glossy and hold form. Spoon about a 1/4 cup of the jam over the cooked rice pudding then top with the meringue. Cook for 20 minutes or till the meringue turns golden. Leave to rest for 10 minutes before cutting into it. 13.01.2022 #Fathersday2020 - Dessert at mine was an adaptation of my orange almond meal cake, only this time I made it with lemons. . Preheat oven to 170, grease a round cake tin, about 22cm in size. . Place 2 lemons in a saucepan and cover with cold water. Bring to the boil over medium heat. Cook for 15 minutes. Drain. You then return the lemons to the pan again and cover with cold water. Bring to the boil and cook for another 15 minutes (this will reduce the bitterness of the peel).... Cool and chop into pieces. . Pop the lemons into a food processor and process until it’s smooth. If your lemons have seeds you’ll need to check the mixture and remove them. . Beat 3 eggs with 1 cup of caster sugar until thick and pale. . To the mixture add 3 cups of almond meal, the lemon mixture, 1 teaspoon of baking power and fold everything through gently. . Fill your cake tin with the mixture and pop into the oven. Bake for 55-60 minutes until your skewer come out clean. . Top with fresh fruit and icing sugar. . 09.01.2022 One Pot Sausage with Spinach Rice.... For those days when a throw everything in a pot and cook is exactly what you need. Simply brown some sausages and set aside.... Cook a sliced onion and garlic. Add 1 cup of rice with 2.5 cups of chicken or beef stock. Add spinach, capsicum and anything else you can find. Stir. 09.01.2022 Asian Cumin Beef with Asparagus... a little bit sweet, a little bit savoury and a whole lot of moreishness. Recipe: 1/2 kg beef chuck steak, cut into chunks... Marinade... 1 tablespoon freshly grated ginger 2 garlic gloves, crushed 1 tablespoon caster sugar 2 teaspoons ground cumin 2 tbs Chinese rice wine 1/4 c salt reduced light soy sauce 1 teaspoon sesame oil 1 cup beef stock 2 spring onions, thinly sliced Jasmine rice, cooked Asparagus, chopped and cooked to your liking Place all ingredients for the marinade in bowl then add the beef. Leave to sit for 30 minutes. Pan fry the beef, add the remaining marinade and beef stock and bring to a boil before reducing to a very low simmer. Cook for an hour or till beef is tender. 08.01.2022 Ribs! How friggin' good are they?! Today's ribs are pork baby back ribs. Loving glazed in a smokey bbq sauce. Method:... Marinade - Mix together 500ml cold water, 2 tbs sugar, 2 tbs salt, 1/4 cup vinegar. This can be doubled if needed to ensure the meat is covered. Leave for 1 or 2 hours. Preheat oven to 140c Removed pork from marinade bath and pat dry. Place in roasting pan, drizzle with some oil and then lay a piece of baking paper over the top. Cook for 1.5 hours. Baste: 1/4 cup each of tomato and bbq sauce, apple cider vinegar and sugar. 2 tbs chilli sauce, 1 tbs worstershire sauce and 2 tps black pepper. Finally the smokiness, you can use 2 tsp of smokey paprika or liquid smoke. Once the 1.5 hours is up, start basting. 06.01.2022 Dumpling time again... this one is Cumin Lamb Dumplings done in a pinch braid wrapper. I love, love, LOVE Cumin Lamb Noodles so making it in dumpling form was a no brainer. Recipe:... Mix together 290g plain flour, 3/4 cup of just boiled water and a pinch of salt. Knead for 3 mins and then leave to rest for 30 mins. Mix together: 2 tbs cumin seeds - roughly grind so there is a mix of powder and broken seeds 500g lamb mince 1 egg 1/2 cup finely diced onion 2 cloves minced garlic 2 tsp grated ginger 2 tbs shaoxing wine 1 tsp dark soy 1 tbs soy sauce 1/2 tsp white pepper 1 tsp chilli flakes Roll out dough and divide into 16 pieces. Roll out 5 discs at a time Place a good tablespoon of mixture into centre then close the top as you choose. This is a pinch braid. Heat oil in pan and place in dumplings, cook for a minute or two till they have golden bums. Pour in 1/4 cup water and cover immediately. Cook for 8 minutes. Remove lid and cook till water has completely evaporated. Serve with a scattering of sesame seeds and chopped scallions. And a dipping sauce. Simply pan fry quartered and halved brussel sprouts and corn cut off the cob.... Pan fry the prosciutto. This crisps up as it cools so cook till you see the natural fats start bubbling and then place on absorbent paper. Scatter everything over mixed greens. 04.01.2022 Veggie Noodles... the quickest dinner EVER! Using leftover veggies, throwing in a 6 minute egg and quick cook ramen noodles means dinner is on the table in under 15 minutes, and that's being slow! Boil water in saucepan and place eggs in, cooking for 6 minutes (up to 10 minutes for hard boiled)... Boil a kettle of water and pour over your noodles leaving to soak for about 3 minutes. While eggs and noodles are cooking, place veggies you want to use into a pan and heat through. Peel eggs. When ready to plate, toss a little sauce of choice (soy, chilli, kecap manis, sweet chilli etc) through your drained noodles and place in a bowl. Top with your warmed through veggies. Cut your egg in half and place on top. Sprinkle over sesame seeds and crispy onions. 04.01.2022 Middle Eastern Lamb Salad... Unlike dumplings (for which meatballs to me are just naked dumplings) I love to spice up the meat. Dumplings, I rely on the dipping sauces for the punchy flavour. Meatballs I add as much flavour to the meat as I can possible add.... Recipe: 500g lamb mince 1 tbs each fresh chopped mint and parsley 2 tsp ground cumin 2 tsp ground coriander 1/4 tsp ground ginger 1/4 tsp ground cinnamon 4 garlic cloves, minced 1 tsp chilli flakes 1/2 grated onion 1/2 tsp salt and pepper Place all ingredients in a bowl and mix well. Roll into 12 balls and cook with a little oil till golden and cooked through. I like making a batch of brown rice, bulgur lentils and spinach or kale to use to as a base to meals through the week. 1 cup brown rice, 1/4 cup lentils - fill saucepan with water and cook for 20 minutes after water comes to boil. Drain (when water is cool, throw it into your garden... plants LOVE IT) Add as much chopped spinach as you want to the hot rice and you are done. Will keep in the fridge for 5 days. For ease, buy a bag of mixed veggies or use up what you have in the fridge, briefly cook it, throw it on plates and serve with a garlic yoghurt sauce, hommus and some bread if you choose.
