22.01.2022 For anyone that thinks making TV is easy, I can assure you that I was personally blown away by the work that goes into this & have a new found respect for how h...ard these guys & their crews work For the past 4 days we have been up at 4am & working non stop until 8pm with Guesty & the crew (they have been going for a week prior) one night until 10pm to get the required footage for Guesty & his crew. We have been chasing everything from Barra to Red Emperor, from Dams to the shelf & all in between. Some good days, some slow days, but working hard the whole time. This is the first time I have been onboard with something like this to see behind the scenes at what goes into it, I kinda thought these guys would have a pretty glamorous life, well it’s bloody hard work, long hours, persistence & commitment, as much as if not more so than commercial fishing Like anything in life, you will only get out what you put in. 22.01.2022 Tier 2 & 3 update We have been waiting for October since the beginning of 2020, as this month was to be our film shoot for the Tiers 2 & 3 coaching guides. We are extremely privileged to have access to one of the best offshore fishing photographers in the country for our photography, unfortunately he is based in NSW.... Given current travel restrictions are still in place, we are unsure exactly when this is going to happen now, but please rest assured we are doing what we can to make this happen as soon as possible. Obviously this will change at some point & we will get this done, however our December launch date is seriously in doubt. Given the current situation we are considering a streamlined live personal delivery of the Tier 3 Deep water guide here in Innisfail (possibly at the bowling club or RSL). Before we set anything in stone we are seeking some expressions of interest from people that might like to attended this event. If there is enough interest we will set it up & make a night where we will immerse you into the fine art that is Deep Water Target Fishing. 18.01.2022 Keeping fish fresh & maximising shelf life is not rocket science, but there are a few key elements that can maximise both of these It’s all comes down to 3 main factors 1- minimising the handling process 2- COLD ICE SLURRY ... 3- time management with the fish from water to ice Here is how the process works 1- when the fish comes aboard if you intend to eat it, it should be instantly bleed by a snip of the gills (time frame 10 seconds) 2- the fish should then be gently placed in a thick ice SLURRY (Temperature -4DC) (time frame 10 seconds) 3- if the ice SLURRY is cold enough the fish goes into shock where the hart will begin pumping blood to vital organs exiting the fish through the gill snip putting the fish to rest peacefully as the it is in shock & the nervous system shuts down (time frame 20 seconds). 4- by this time the fish is at rest & starting to firm up in the ice SLURRY (time frame toatal from water is 40 seconds maximum) These 4 steps are probably the most critical, every second counts & the longer it takes to get the fish from water to rest at -4DC the less shelf life the fish has & less freshness it will hold. This also reduces the need to stun the fish by a blow to the head or brain spiking, much more humane 5- after around 20min the fish should then be removed from the ice slurry(with the ice SLURRY remaining inside until all fish are out) & packed belly up into a holding box with a sprinkle of ice covering them (temperature should be 0.4DC) this reduces stomach acids leaking over them which will reduce shelf life, this makes sure the fish is at the right temperature before storing. The fish are stored like this until returning from a trip out 6- when returning from a trip the fish should be either gutted & gilled or filleted, then cryovaced & placed one the fridge or freezer. Cryovacing is an important part of maintaining freshness & flavour. 7- fish can now be removed from fridge or freezer for cooking or sushi consumption With this 7 step process the fish is handled a total of 4 times from the ocean to the table, this is another extremely important factor. The less the fish is handled the better it will keep It’s important to avoid putting any holes (gaffs or brain spike) anywhere in the fish besides the mouth where the hook is use to catch the fish, it’s better to use a net where possible. This makes sure that none of your fish have anywhere that bacteria could potentially enter the flesh, extremely critical to maximise shelf life & flavour of the fish The best way to see how fresh a fish is is to look at its gills & eyes.
