25.01.2022 POT OF BLISS... Blood plums were $2 a kg at the market yesterday so in the pot they went, together with red apples, red onions and red wine vinegar...are you feeling the red theme? Also tossed in sugar and spice and then let it bubble away for an hour or so to produce this quite awesome Blood Plum Chutney that I can’t wait to dollop on things with abandon!... 24.01.2022 JUST A PINCH... It occurred to me how often I call for ‘a pinch’ of something in one of my recipes. A pinch of salt, of sugar, or chilli or spice...... Here, I am adding a pinch of saffron threads to stock when making my favourite paella. But how much is a ‘pinch’? Well, of course, it will depend on, firstly, how big your fingers are (!), but mostly, if you ask me, it’s just enough to make a difference. A pinch gives you a nuance, a shade, a layer, in your cooking. It’s not enough to dominate but it must be discernible. If you want a precise measure then 1/4 teaspoon will be just about right, but your best measure is your tastebuds or eyes. ‘Stop and Season’ for salt, sugar, spice... ‘Check and See’ if what you’re adding is impacting colour or texture (like saffron or, say, cornflour). This is where the Cook’s Sense comes into play...pay attention to the effect that pinch is playing in what you’re cooking! 21.01.2022 OSTR...Northern Italian with a twist. As Melbourne gets back into the swing of dining out, it was lovely to stroll to this local eatery for fine, seasonal food served with flair. With roots in Northern Italian cuisine, the menu has an undeniable freedom of expression. It is modern but true to the flavours and textures of regional Italian cooking.... Swordfish Crudo with a flutter of nasturtium petals; an impeccable beef tartare of Ranger Valley tenderloin; a pretty and innovative dish of pearl cous cous coupled with scarlet prawns in a rich bisque; and Brescian-style filled pasta called casonséi swimming in a foamy Heidi Tilsit sauce with crispy sausage was both surprising and satisfying. 14.01.2022 A DECADENT LUNCH started with a bump of Siberian Beluga caviar at @scottpickettchef ‘s newbie @chancerylanebistro and meandered through a pretty goats curd tart, gnocchi Parisienne and sublime salmon confit, with a bright sorrel sauce poured around it at the table. A couple of gin and elderflower cocktails, a glass of wine (my favourite MRV blend), lunching amongst the William St set, and before we knew it, it was four hours later. Truly a good sign of a great restaurant wh...ere you can settle in and feel well looked after at every level. Scott’s food is always polished and matched by the exemplary service and sophisticated fit out which I imagine would really come into its own in the evening. 05.01.2022 SMOKY.. I love playing with my smoker bbq. It’s a pellet smoker which means that with the flick of a switch I can start smoking anything within 15 minutes. So for last night’s mid week dinner for 7, my Smoked Peppered Beef fillet got the smoke and reverse sear treatment after being coated in a spicy mustard mix and rolled in crushed peppercorns. ... The Traeger smoker holds the temperature as consistently as an oven, which means I can get busy with making accompaniments while the meat is doing its thing. No tending the fire or stressing about the temperature dropping. The recipe is on foodcentric.com.au and you can easily adapt it to roast instead. Allow 15min per 500g at 200 deg C. The first of the new season cherries inspired me to create this simple Cherry Coconut Slab Cake that is now up on foodcentric.com.au It’s worth investing in a good cherry pitter utensil - one you will have for life - as it really makes quick work of this job that is the fiddliest part of the recipe.... The rest is a ‘bung it in the tin’ exercise, but do be sure to line the base with baking paper so turning it out is fuss free. Delicious dusted with icing sugar and served with a dollop of Greek style yogurt. And it’s a perfect cake to bake to take on a picnic!
