21.01.2022 Whenever I'm feeling out of sorts, baking is my refuge. The simple process of taking raw ingredients and turning them into something glorious is both immensely ...gratifying and soothing for my soul. Last night, this plum, hazelnut and buttermilk cake was just that. Here is the simple recipe. cup buttermilk or natural yoghurt 3/4 cup light muscovado sugar cup melted coconut oil or butter 3 free range eggs 2 tsp vanilla bean paste 1 cups hazelnut flour cup oat or spelt flour 1 tsp baking soda 1 tsp allspice or cinnamon tsp sea salt Preheat the oven to 180C and line a cake tin with baking paper. In a large bowl, whisk together the buttermilk, sugar, coconut oil, eggs and vanilla, then gently fold in the remaining dry ingredients until just combined. Tip the batter into the cake tin and smooth out evenly. Arrange your slices of fresh plum on top. Most types of berries or stonefruit will work well here. Bake for 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool in the tin for about 15 minutes, before carefully turning out on to a cooling rack. Ingredients... 3/4 cup brown rice syrup 1/2 cup peanut butter 1 tsp vanilla extract 1/4 tsp salt 3 1/2 cups brown rice crisps 1 1/2 cups 70% dark chocolate 2 tbsp coconut oil Here’s how they come together: 1. Line an 88 inch baking pan with parchment paper and set aside. 2. In a large bowl melt the brown rice syrup, peanut butter, vanilla extract and salt together in a small pot on medium heat or in the microwave. Mix together until well combined. 3. Mix the brown rice crisps into the syrup mixture until combined. 4. Pour the mixture into the pan and press down To make the chocolate topping, melt the dark chocolate and coconut oil together in a double boiler or microwave until melted then pour and spread evenly over the bars. 5.
